Raphaël Mettler and his team have been brewing beer with a passion since 2003, and their enthusiasm is eminently contagious: the Trois Dames beers from Ste-Croix challenge the taste buds and flatter the eye, and that is exactly what makes them original. Bottle: Poured a deep amber color ale with a large foamy head with limited retention and not much lacing. Aroma of sour notes with unrefined grainy malt notes is not all that pleasant. Taste is also a weird mix of vinous notes with some sour notes with unrefined grain malt notes also perceptible. Body is average with OK carbonation. Unbalanced sour beer with some off-flavours.

Bottle from St Gambrinus: pours golden with a white head. Aroma is very woody and somewhat fruity. Taste is woody, slightly sour, not very fruity or sweet. Solid.

21/4/2020. Sample courtesy of the Højbjerg massive. Pours clear pale gold with minimal head. Aroma is funky, woody, tart, winey, yeasty with a little burned brown sugar. Moderate sweetness with medium tart, and a vinegary and slightly salty side. Medium body, average carbonation. Enjoyed this.

Gushing to clear golden beer, well-carbonated under very fluffy just off-white head; later pours fully hazy. Brett-like aromas a mile out; citrussy aromas, orangepeel, mould, fresh-smelling. Mild, fruity sour; lightly citrussy, finish a bit dry-spicy, oak, and a bit of old grains. Well-carbonated, bit slick, refreshing enough. Light (!) body, alcohol is almost entirely hidden. Excellent.

ABV: 7.2%. Clear medium to dark brown colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, roasted - dark malt, sour, berries, wood - woody, alcohol - vinegar - yeast. Flavor is moderate sweet and light acidicr with a long duration, tart, wood - woody, berries - red berries, alcohol - vinegar, dark dried fruit, medium dry. Body is medium, texture is oily, carbonation is soft. [20200408]

Flavor is moderate sweet with a long duration, wheat, tart fruity, yeast, grapes - green grapes, light wood - woody. Body is medium, texture is oily to watery, carbonation is soft. [20200408]
