Description
In 1994, just as the fledgling craft beer industry was starting to gather steam in Colorado, Mike and Amanda Bristol settled comfortably in the lap of Pikes Peak and started hand-brewing fresh, distinctive ales for the locals in Colorado Springs.
Today, our beers are available on draught and in six packs, four packs, and bombers across the state. And Mike and Amanda have been joined by a cast of characters that make magic happen at Bristol every day. Collectively, we are a family of smart, friendly people who really love beer. We love the glorious flavor. We love the global tradition and history. We love the art and science of brewing. And the pure contentment of enjoying a pint at the end of the day.
In 2013, we moved lock, stock, and barrel into a former elementary school, where we happily ignore school rules by brewing and serving beer in the classrooms, including our onsite pub. Built in 1916, the building’s hardwood floors and brick walls, former gym and student artwork radiate charm and a hip but super-friendly vibe.

Opaque black beer. Not a lot of carbonation. Chocolate and marmite nose. Light semi dry palate. Taste follows the nose but adds some rich porty tones and some dried fruits. Dry and warming finish with some aniseed and marmite. Nice beer but not the knockout I was hoping for.

12 fl oz bottle. Pours dark brown with a small tan head. Aroma is roasted malty and sweet malty and slight vanilla. Dry malty and sweet toasted malty. Lingering dark malty and caramelish.

Bottled. A dark chestnut brown beer with a thin beige head. The aroma has notes of caramel, malt, and wood. The flavor is sweet with caramel, malt, and wood, leading to a bitter finish.

Bottle 35,5 cl. Courtesy of Doodler. Pours an opaque pitch black with a small beige head. Hard roast aroma with a whiff of smoke. Medium body, hard roast malt, raisin accents, some smoky notes with a malt astringent finish. Stout? Indeed. Sweet? No way. 270411

355 ml bottle. Dim, reddish orange body with a diminishing tan head. Aromas of sweet malt, caramel, dry fruit, raisins, spices and alcohol. Flavor is sweet malt, dry fruit, spices, caramel, balanced bitter and warming alcohol. Nice body, fine balance, a solid barley wine closer to the American style.

12oz bottle, bottled in June, drank in March. Hazy orange-brown, frothy head. Orange-caramel-toffee aroma. A pretty lackluster IPA, the hops dont really match up with the rich malts. Comes off syrupy and chewy. A little piny, soapy. Probably better fresh. Underwhelming and sub par as is.

Bottle @ Hotelroom, Denver. Pours black with a tan head. Aroma of chocolate, coffee, dried dark fruit. Taste is dried fruit, raisins, chocolate, light coffee,roasted malt. Medium body, silky mouthfeel, soft carbonation. Solid and pretty good stout. 070311

Pours brown with a off-white head, Aroma has notes of barley, molasses, malt, brown sugar and dried fruits. Taste is medium sweet and light bitter. Body is medium, texture is oily, carbonation is soft to flat.

Bottle, 12oz. It pours a more or less clear body, brown in color and a small, off-white to light beige head. Alcohol, citrus, pine cones, dried fruits, caramel and alcohol on the nose. Complex and pleasant. The flavor has much the same found in the aroma. Full-bodied, warming and sweet on the palate. Low on carbonation, but that’s pleasant. Complex flavor too, with caramel, citrusy, piney hops, bitterness and a meaty touch. Lasting finish. A tasteful, delightful beer that lasts and pleases. Nice. 110301
