その一部をなす上富良野(かみふらの)は、
道内で唯一、ホップが商用栽培されている町です。
そして私たちブルワーにとって、希少な地のホップを使って
ビールを醸すことは、この上ない幸せでもあります。
ホップづくりのプロと語らいながら、生きたホップとふれあい、
ビールづくりのプロとして、さらなるおいしさを追究したい。
ここでなら、それができる。だから私たちは、ここに集いました。
立ち上げたブルワリーの名は、忽布古丹(ホップコタン)醸造。
コタンとは、村や集落を意味するアイヌの言葉で、
まさに北海道のホップ集落=上富良野のことを指す名称です。
この国がもっとビールを楽しめる国になることを願い、
コタンから多種多様なおいしいビールを全国にお届けします。
ホップに囲まれ、幸せいっぱいの私たちは、FULL OF HOPPINESS!
このホピネスが、お飲みいただくみなさまにも伝わりますように。
数年先には、すべて地のホップを使うブルワリーをめざして。

The name of the brewery that was launched is Hop Kotan Brewing. Kotan is an Ainu word meaning a village. It is a name that refers to the hop village of Kamifurano on Hokkaido.
I hope this country will become a country where you can enjoy more beer. We deliver a wide variety of delicious beers nationwide from Kotan.
Surrounded by hops, we are full of happiness, FULL OF HOPPINESS! I hope this happiness will be conveyed to everyone who drinks it. A few years from now, aiming for a brewery that uses all the hops of the earth. And eventually, the local barley and wheat.
Nice stuff. Fruity. Not the most exciting but it’s good.

Full on pepper at the start and then no taste. Bit weird. Maybe not pepper. Can’t explain it. It’s dry maybe. Maybe a bit creamier later on. It’s alright actually.

So good, but so dangerous. Sweet and fruity. But cake like too. Got that jammy sweetness, and some kind of saison yeastiness. Surprisingly great.

Floral and sweet fruitiness. Minerals and something. Quite nice.
Slightly vinous, good fruity flavour. Not a great deal of saison feel. But quite fun.

Hop Kotan Bretta Haskap I’m a big fan of Haskap so was glad to get my hands on this reddish orange brew with fast disappearing pinkish foam. Big bright Haskap slightly tart berry aroma. Medium bodied with a very dry finish. The taste is Haskap then rich malt followed by a abrasion be carbonic finish. Really interesting and I wish I could’ve gotten one to age to see how the Brett developed.

Hop Kotan Nonno Pale Ale APA 5% Ruddy orange copper color with dense light beige foam and piney sweet fruity hop bouquet. Very light bodied and dead easy to drink. The taste is bright pine with white grape hoppiness. Satisfying APA.

Tap at Komachi. Bright deep gold. slightly hazy. Bright citrus and herbal hop nose, clean, crackery malt. Bready malt flavor, light pine, citrus, pith, slightly dank. Crisp and full body. Good stuff. Definitely suited for an everyday drinker.

(Tap) Clear amber, tiny white head. Great aroma of passion fruit and citrus. Medium body with good carbonation. Great taste. Hops dominate but there’s nice biscuit malt and a tangy start. Very nice.
