Description
A wise friend once told us to “brew the beers you want to drink.” We took that advice to heart. While there are many great beers brewed in Japan, we still felt that there was something missing--no one brewery that fully satisfied all of our beer desires. We started KBC to fill that desire, believing that there were many others out there who felt the same way and would rally behind our products.
For our inspiration, we looked to the two brewing traditions that excited us the most: American and Belgium.

American craft beer has done more to change the face of the brewing world in the last 30 years than anything else out there. New hops, new styles, new hybrid beers, new extremes of high (and low) ABVs and IBUs. This is what we aspire for; never being afraid to try something new just because it hasn’t been done before or someone tells you that it can’t be.

Belgium is much more steeped in history and tradition, but is just as willing to continue doing what works for them, not what others tell them they should do. Effects from different yeast, both selected and wild; different taste sensations from the sweet, to the dry, the light, the heavy, the bitter and the sour, Belgian beer has been hugely varied and complex in both its methods of production and results.

While beers from both of these traditions are interesting on their own, we feel that combining our favourite aspects from both produce a more unique and rewarding product.
Our house yeast is a Belgian strain. The majority of the hops we use are American. Combining both in interesting and unique ways makes for inspired beers, flavourful products, and a really fun brewing experience. This is our starting point. Where our journey will take us and what beers we will make in the future, we do not yet know.

On tap at the brewery. It’s got a welcoming fruity citrus aroma featuring prickly pear. It’s very crisp, light gold in color with pithy lemon,prickly guava and chewy wheat flavors. Really nice, an exemplary American Wheat ale.

Tap at Keyaki. Bright gold, cloudy, pretty, with a bubbly head. Grassy hop nose, orange, lemon, wheat malt. Tasty stuff, light, hoppy, grassy, creamy. Nice apricot. Juicy hops. Love it.

Tap at Turquoise. Crackery malt nose with lots of green grassy aromas. Some lemon on the palate and lots more Easter basket grass. Bitter finish. Not as good as winter I’m afraid. dark brown color. Light brown head. Big yeasty nose with chocolate and roasted notes. Dry mouth with some red wine, chocolate and yeast notes. I find the flavors fight a bit. In general I don’t think dark saison a work well and this isn’t an exception. Lingering Belgian yeast and chocolate finish . Well made but not my thing

Tap at Awashima Souko. Hazy gold with just a tiny bit of head that lingers throughout. Wheat-forward nose with some light tartness, lemon, white grapefruit, pith and light tropical hops. Good carbonation and creamy on the palate. Some herbal notes, coriander mostly, with good hop bitterness. Excellent wheat ale and very reminiscent of the season. Nagoriyuki A lovely with a foamy white head. A mildly eggy sulfur wheat/Weizen aroma. Light bodied with a smooth mouthfeel. The taste is eggy, wheat, a bit sweet. A decent wheat beer that’ll go down well once sunnier days roll around.

Tap at the brewery. Pretty, deep pastel gold, cloudy, with a thick, fine head. Rather plain nose, wheat, light esters. Rich wheat malt flavor, bread, some biscuit, light citrus hopping, orange. Crisp and refreshing.

On tap at KBC. Kurayami no Senko Peppery & cocoa powder aroma. Medium to full bodied. A very green hop character with cocoa powder notes. A smooth hoppy black beer.

Tap at the brewery. Bright, glowing, cloudy golden orange. Great grassy, herbal noble hop nose, seems very dry hopped, and noble. Light crackery malt with some wheat. Nice citrus flavor, orange, light tropical fruits. Good spring feeling.
