What motivates you? What is your passion? Ours is simple – brewing beer that may appear similar to other quality craft beers on its face, but can hardly be enjoyed with just one glass and barely described with just a few adjectives or expressions. Using local ingredients, old world brewing techniques, and a whimsical sense for exploration, we hope to challenge your notion of what beer is and inspire you to share our passion with others.

12oz bottle. A big, deep, rich, full bodied Smoked Strong Ale. Drinks big, more similarities to a Barleywine than to a Schlenkerla or Spezial smoked beer. Not that impressive of a final product. Once again, floaties. Has what seems to me like mild infection issues too. Probably more enjoyable on tap.

12oz bottle. Unfiltered light orange body, faint shades of strawberry pink. Not much of a head, fades away fast. I really like the interplay between the salt and the rhubarb, how the salt accentuates the rhubarbs dryness. Medium bodied, very easy drinking. Balanced and well executed.

12oz bottle. Deep brown-black body. Big creamy beige head. Full bodied, heavy Porter. Quite enjoyable, bold for the style, and thankfully free of gimmicks.Rich chocolate, caramel, faint coffee. Really nails it.

12oz bottle. Deep, unfiltered brown-copper body. Floaties... which bring the appearance score down. Foamy, glass lacing beige head. Bold, big, and resinous certainly, but also quite antiquated and not that impressive of an offering for 2016. Deep caramel malt and resinous hops merge pretty well. Drinkable. OK.

Appearance: Very hazy yellow, almost no head.
Aroma: Tart, citrus, wheat. Slight strawberry.
Taste: Tart, wheat, citrus, some light fruits and strawberry.

Purchased at Bottles and Cans in Chicago, IL; enjoyed at home on a Sunday afternoon prior to heading up to see friends up north. Appearance is caramel/amber, moderate consistency with a modest off white head. Aroma of smoked malt. Taste is equally smoky with nice caramel notes. Overall good stuff.

Purchased at Bottles and Cans in Chicago, IL, enjoyed at home on the first night of vacation! Appearance is cloudy gold with a moderate white head. Aroma is sweet, smells fantastic and decently bitter. Taste of clove, banana, like a Belgian weiss. Pretty good stuff!

Draft at Shoeless Joe's. Dark brown pour with a creamy head and a lot of lace. Heavy coffee in both the aroma and flavor. Roasty and fairly bitter. Definitely get the espresso feel and flavor they were going for. Fairly full bodied for a brew under 6%. I'd have guessed higher. Rather dry/ bitter on the finish. There's a lot of coffee flavor and body packed into this beer. Maybe it could use a little balance, but overall, it is pretty good.
