Ancient Beer, Modern Method.

Fermenting since 2014 with only wild brattleboro mixed culture yeast. continually pushing boundaries of new sour beer. brewhouse fueled by wood, not fossils.

To truly understand terroir and wild yeast, a brewer must come to terms with the type of beer that “wants to be made” in their region. We are proud of Brattleboro’s wild yeast for its balance, its stone fruit and pecan character, and how dry and effervescent it leaves the beer. We are grateful to our region’s farms for the availability of world class hops and fruits, as well as to our area distilleries for unique and beautiful oak barrel flavor histories.

We delight in making beer that could only be made in our place, with our team, supported by our community and environment.

Draft at the brewery taproom. Pours clear orange with a foamy white head. Not bad, some pleasant pale malts, rindy citrus, low bitterness. Medium bodied with fine carbonation. Lightly dry on the finish with more simple pale malt structure, citrusy hops, rindy and lightly piney bitterness. Easy drinking gear.

Draft at Worthy Burger. No head on a bright orange/ gold liquid. Aroma is light oak, hints of fruit, maybe Apple and yeast.

Mild sour oak, pale malt and toasted grain with a lightly tart finish. More tart rather then sour. I don’t really find that it is a tart Apple flavor just undisclosed fruit. The body has a yeasty chewiness with some lingering fruit in the finish. I would be willing to sample more from this brewer because this was pretty easy to drink.

Whetstone: pours pale gold with small white head. Aroma is socks, basement, and wet dirty hops. Taste is hop water. It is good in its own way but i dont know if i really dig this jawn.

Keg at the brewery taproom. Pours clear yellow with a white froth topping. Very dry and very clean. Lots of pith, pale grains, hay. Light in body with fine to average carbonation. Finishes clean and drying with some crackery pale malts and pithy lemon. A solid low ABV pale ale.

Keg at the brewery taproom. Pours clear, deep brown with a foamy, light tan head. Very nice beer, with some tangy dark fruits, mild leather, some mild dough, Belgian yeast. Medium bodied with fine carbonation. Moderately woody on the finish with slight tannic dryness, notes of dried fruits, faint acidity. Solid beer with good depth.

Keg at the brewery taproom. Pours deep amber with a foamy, light tan head. A very nice beer, with pleasant grainy malt character, light tangy fruits, berries. Medium sweetness, light Belgian yeast. Medium bodied with fine carbonation. Lightly warming to finish with further yeast expression, some bready malts. Solid.
