As of 5/24/25 Wasatch Brewery beers will no longer be brewed in Utah. They will be brewed in the Monster Brewing network.

“Where’s the beer? Where are the breweries?” Those were among the first thoughts Greg Schirf had after moving to Utah from Milwaukee in the early 80’s. Incredibly, drinking and brewing were all but forbidden. Greg took matters into his own hands and did what any self-respecting midwesterner would do: He started a brewery. Wasatch was the very first brewery in Utah – and one of the first craft brewers in all of the U.S. – brewing award-winning brews since 1986.

In 1988, Greg Schirf proposed another bill to the Utah Legislature making brewpubs legal in Utah and opened the first brewpub at the top of historic Main Street in the resort town of Park City. Wasatch continues to misbehave, turning out naughty beer after naughty beer year after year.

12 ounce bottle from Dan’s grocery store. Pours a dark copper color with a small white head. A big nose of earthy caramel and citrus hops. A sweet brew with nice balance, some earthy malts, floral hops, light oranges, very smooth. Thin at times. Good.

Big 750mL bottle courtesy of the uber generous douglas88. It pours crystal clear pure gold with thin near white head of foam. The aroma offers up a sweet mix of malts, grainy malts, corn, floral hops and a touch of apple like fruity esters. The taste delivers as sweet malts and corn to grainy notes mix with an adequate level of floral hop bitterness and flavor. Man, I am in the mood for this as it is drinkin’ gooood.

Poured up on tap at the Squatter’s pub in the SLC airport. It pours a crystal clear gold with a nice lasting white head of foam. The mild aroma offers up some sweetness mixing with floral hop notes. The aroma neither draws you in or turns you away. The taste is nice and sessionable where somehow I’m getting some grainy glutton like grain mixing with some floral hop flavor and floral hop bitterness. The bitterness keeps this thing lively. It gets an added touch of sugar sweetness midway and into the finish. Yep, the moderate level of hops here really makes this work for me.

Bottle. Pours dark clear brown with thick lasting head and much lacing. Caramelly aroma. Good full flavour that gets better as the beer warms. Caramel, malt and some toffee.

On tap at GABF 2012. Apparently this is based off of Chasing Tail with Cascade and Saaz hops replacing the regular hop bill. Pours a clear golden color with a medium white head. A nice bouquet of fresh hops and perfume. Very clean flavor with biscuit, English character, almost like a hoppy bitter, fresh light pine and floral hops. Nice.

Dark amber color, clean. Very light and simple caramel aroma. The flavor too is simple, basically caramel, with a hint of cereals; moderate sweetness; lox bitterness.
A drinkable beer, but not a Doppelbock to remember.

Purchased at Breeze Thru Liquors in Milwaukee, WI; enjoyed at home on a lazy Sunday after running 9 miles in the morning. Appearance is a cloudy, vibrant amber with a thin white rim around the glass. Aroma of pumpkin, light vanilla, bit of clove, bit of caramel malt, smells flavorful while also smelling a bit light. Taste is an above average pumpkin ale, pulls off the sweetness pretty well with also adding a light bitterness. It’s not very potent which is not a bad thing, makes it even more session like. Pretty damn good stuff.
