Description
Virginia Cider from the foothills of the Blue Ridge Mountains. Here's proof that less is more.

We are a small, local Virginia cidery that started from a desire to craft something with our hands, a product of science and art. Our fruit comes directly from our orchard in the heart of the Shenandoah Valley. We press heritage apples and cool-ferment the juice to proper dry, and age for more than a year. Our ciders are authentic and simple; not to be confused with highly sweetened national brands you might find in your grocery store..

Bright clear pink, violet and light brown coloured body with a thinnish off-white head on top that fades fairly quickly and doesn't leave much upstairs. Aroma of spices up front with some apples, pears, grapes, caster sugar, alcohol, and way more spice.  Light to even slightly Medium-bodied (for a cider); Strong spice flavours dominate everything up front with a ton of canella, cinnamon, earth, nuts, licorice, anise, nutmeg and even horehound notes that show way more complexity and punch than the apples, which are noticeable. Aftertaste shows more spice with some molasses,  spice, anise and pungent soy sauce component, all with a lot of extra sugars and honey notes with nutmeg and ginger, too. Overall, a very richly spiced cider that shows a ton of flavours from that instead of the typical apple and honey notes, but a very pungent and very interesting cider throughout. I sampled this twelve ounce can, purchased from Whole Foods in Arlington (Pentagon City), Virginia on 17-December-2019 for US$3,49 sampled at home in Washington on 06-February-2020.

Keg at Draft Taproom. Hazy yellow, thin fizzy tan head, fair retention. Aroma of sweet apple, honey, apple skins, mild pepper and citrus. Taste is tart apples, spice, apple skins, mild hops. Medium bodied.

750mL shared at a tasting. Its a very watery cider, tastes like the leftovers of a glass. Seems like a waste of a barrel. Not sweet or dry or very flavorful. Just tastes like leftover water and cider mix.

750ml bottle pours a clear gold with no head. Apple nose, some woodiness, apple sauce. Flavor is apples, cider, pears, booze. Oily finish.

Not much bourbon here but lots of booze like a dry grad party. White wine like pour. Tangy finish. Bottle.
