Description
Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Bottle. Pours black with a creamy brown head that dissipates slowly to the edges. Aroma has a good amount of coconut with a strong lactose backbone and a bit roasted malt. Flavor starts with lactose and coconut and has a growing roasted malt note that adds a bit of bitterness.

Bottle courtesy of noodleuser, thanks! Murky orange, thick white head. Aroma of orange and vanilla cream with some tropical fruit. Taste is bitter and fruity straw. Nice.

On tap at Jerry’s. Pours aclear deep amber orange a tan head that dissipates to the edges and laces. Aroma has a good amount of sweet grain and caramel with a hint of bitter pine. Flavor has sweet grains with a bit of caramel and a slight bitterness in the finish.

Sampled from the tap at FOBAB 2012. Pours black with a dark brown head that dissipates to the edges. Aroma has cinnamon and light peppers with a backbone of sweet dark grains and rye barrel. Flavor has cinnamon throughout with a bit of heat from the peppers with backing dark grains and roasted malts.

Sampled from the tap at FOBAB 2012. Pours a clear red with a white pinkish head that starts and remains at the edges. Aroma has a combination of tart blueberry and raspberry with a light yeast note and a hint of acid. Flavor is full of sour blueberry and raspberry with some underlying acid and a bit of a funk note.

750mL bottle, sent from tstockstrom (thanks Chuck), pours black with a small light brown head. Nose brings out chilli peppers and cinnamon sticks, with the chilli eclipsing the cinnamon - there is some subtle hint of roasted malt and cocoa powder buried further underneath. Flavour brings out the best of chilli, cinnamon sticks, and light cocoa powder - the chillies are most dominant, followed by the cinnamon. Loads of depth and complexity, with perfect execution of all the spicing. Excellent stuff - highly enjoyable, especially considering I don't normally enjoy spiced stouts.

750mL bottle, sent from tstockstrom (thanks Chuck), pours a dark purple, almost like grape juice, with some bubbles for a head. Aroma of black currants, some Belgian candied sugar, and some lightly tart grapes. Flavour is lightly tart, with black currant, some mild candied sweetness, and grapes. Lightly tart and very dark fruity. ABV is no where to be detected. Good fruit beer - I'm just not a big fan of black currants.

750mL bottle, sent from tstockstrom (thanks Chuck) and coryking (thanks Cory). Pours a hazy amber with a small white head. Aroma of wheat, candied sugar, some white chocolate, toasted nuts and boozy liqueur. Flavour is light on the tongue but very alcoholic, with lots of booze, some candied sugar, paint thinner and faint licorice. Extremely boozy and paint thinner-like, with high carbonation. Way off the mark here.

750mL bottle, sent from tstockstrom (thanks a lot, Chuck), pours an opaque orangey ruby red with a small white head. Aroma of grapes, loads of brett and oak - very complex, inviting nose. Flavour is very funky and wild, with some lightly tart grapes, brett funk, oak barrels and some dank earthy notes. Very complex, with an earthy red wine finish. Highly drinkable, made so by the funky qualities. Excellent stuff.

750ML in a wine glass.

A - dark purple, 2 finger red head that fades to a single finger. nice lacing

S - Smells of brown sugar, cane syrup, raisins and apricots. Hint of cherry.

T - Taste is similar to the smell. lots of cherry, blackberries and dark fruits. sort of sweet at the finish.

M - medium body, high carbonation

O - Not a bad beer. Not one I’d seek out again though.
