Previously as homebrewers, we made beer, wine, and dry cider, which we preferred over too-sweet industrial brands. We began developing our cider concept in 2009 while visiting England. There we attended a street fair in a town called Battle and slaked our thirst with real, Kentish country-style cider made from 100% apple juice (scrumpy). It was dry and still, standing in contrast to the syrupy-sweet industrial brands sold in the English pubs and much of the U.S. Market. Our notion was whetted into conviction: cider needn’t taste like artificially-flavored apple candy, and when made with 100% juice—and without concentrates, corn syrups, or other undesirables—real cider is a pure, yet complex and palatable delight. Years later, this experience continues to inspire our own real North Carolina cider and mead. Cheers, to your health and pleasure.

On tap at the NC Cider Fest in AVL, back to back pours. Magenta hazy. Honey floral nose, not a lot of fruit. Hibiscus-like, with a slick meatiness given by the agave mead base. Slight murkiness in the background that is the house flavor. Good.

On tap in July @Black Mountain. Pale gold, mostly clear, seems almost still. Smell is soapy ginger & a bit of hard water. Pithy, obvious bright ginger upfront, bittersharp apple middle, with a mellow but building orange zest that lingers & makes it pretty good. Watery feel, decent acid, low carb, faintly sweet.

On tap @BM. Purty peachy pink, jellied, mostly still. Strawberry, earthy citrus, apple skin nose. Taste is bittersweet ruby red, strawberry & hibiscus in a sort of mocktail blend. Back end apple acidity & sharpness pops through. Liked this.

Chill-hazed, pale gold sudsy pour @Black Mountain. Peppery floral, waxy, a bit wet & basement-y. Acidy & floral sweet upfront, ugly grain sweet middle, sufite dried fruit. Frothy, low abv & malic acid hurts it a bit. Ends up being okay though. This is the base mead for several other blends.

Pour at Black Mountain. Super quiet now that Pisgah moved out of the lot. Peachy, mostly clear with a little lace. Watery nose of mellow table grapes & wax. Watermelon & white table grapes over a dusty, bitter earth & quite waxy honey(albeit nicely frothy). Nice acid. Okay.

On tap at the source. Medium gold & almost settled. Earthy, tom yum soup herbal, caramelized sugar. Taste is sweet & heavy lemon oil, slight lemongrass funk, basic semisweet apple. Better than expected.

5oz pour at the source. Hazy orange/yellow pour with a dab of head. Big fresh cut mint & muddled sugar nose. Bright mint & freshly sweet, barely fermented watermelon juice that lingers. They back-sweeten sometimes. Saline finish, lots of acid & decently tart, fuzzy finish. Good.

On tap @ TreeRock. Half tour. Jellied pale gold. Clove-y, bitter apple & saline nose. Taste is yeasty, ginger, cedar, salad & bitter green apples. Finishes somewhat dry. Hidden abv, watery as lots of their ciders are. Okay to good.

On tap @Black Mountain. 4oz pour. Clear, classy gold, laced. Warm, rich bourbon vanilla nose. Tast is lingering tart, generic sour apple, layered vanilla, earth, with a sharp orange oil trail. Mostly dry oddly. Too thin, frothy, easy abv. Flavors are good, but this one needs body desperately. Difference between average & world class.
