Description
Sap House Meadery is a small producer of premium, hand-crafted meads (honey wines). The Meadery was founded in 2010 by two young entrepreneurs, Ash Fischbein and Matt Trahan. Together they rejuvenated an old store front in downtown Center Ossipee, New Hampshire using many recycled materials and sustainable methods. Sap House Meads use only time-tested traditional methods and procure ingredients from local farms and markets.

The signature of Sap House Meadery is its use of pure New Hampshire maple syrup in many of its meads. In some, such as the Hopped Blueberry or Cranberry Sage, it is used to add complexity. In the Sugar Maple however, it is the main ingredient with nearly half the fermentable sugars coming from maple syrup.

At Sap House Meadery we value community building and strive to source our ingredients locally. We are committed to creating a product that is steeped in history, produced naturally, and enjoyed universally. Our meads are created with a passion for the land and in homage to the bees that keep the land going. Pours deep copper into a snifter. Still. Hot honey and blackberry aromas. Hot oak and yeast upfront turning to sweet berry in the warming finish.

Pours still, clear and pale yellow gold. The aroma is somewhat floral and simply fruity. Apple cider and roses. Mild honey. A touch of booze. Mouthfeel is thin and watery. Taste is washed out simple honey. Gets a fairly apple cider sour and hot at the close and it dominates the experience. It finishes very dry, dusty dry, but there’s some sweetness to the mead. Very mild floral honey in the taste. The aroma is nice enough, but the taste doesn’t live up to it. Flat.

Bottle. Pours purple. Nose/taste of dried blueberry, honey, dried grass and lots of alcohol. Medium body.

375 mL bottle from Beer Run. Pours a clear amber color, strong legs. Aroma of maple, honey, booze, floral and earthy notes. The taste is citrus, maple, alcohol, vanilla, honey. Medium-full bodied, strong heat. Decent.

Small bottle, maybe 12oz, pours a clear purple with zero head. Nose of blueberry, booze, cheap wine. Flavor is sweet, boozy, berries, honey, again cheap grapes. Sticky finish.

Small bottle. Poured a nice, reddish clear color without any head at all. Aroma was sweet, dry honey notes with a touch of blueberry notes. Sweet blueberry notes, almost a toasty buttered toast note to it. Pretty tasty!

Thanks to me! Poured a clear golden yellow color with no head. Aroma is mostly a a light, sweet notes. Flavor is a sweet, light vanilla notes, with a touch of honey sweetness. Dry, not bad.

Bottle from Beer Run. Pours a crystal clear bronze color, no head, strong legs. Aroma of honey, citrus, vanilla bean, earth, dust, dry must, heavy booze. The taste is intense honey and vanilla, citrus, lemongrass, booze, burnt sugar and an almost woody character in the finish. Medium-full bodied, very hot. Quite nice. 50th mead rating!

Bottle. Deep and clear ruby red color. Aroma of dusty and honey coated berries. Taste is full bodied dried berries and honey. Amazing.
