Description
Sap House Meadery is a small producer of premium, hand-crafted meads (honey wines). The Meadery was founded in 2010 by two young entrepreneurs, Ash Fischbein and Matt Trahan. Together they rejuvenated an old store front in downtown Center Ossipee, New Hampshire using many recycled materials and sustainable methods. Sap House Meads use only time-tested traditional methods and procure ingredients from local farms and markets.

The signature of Sap House Meadery is its use of pure New Hampshire maple syrup in many of its meads. In some, such as the Hopped Blueberry or Cranberry Sage, it is used to add complexity. In the Sugar Maple however, it is the main ingredient with nearly half the fermentable sugars coming from maple syrup.

At Sap House Meadery we value community building and strive to source our ingredients locally. We are committed to creating a product that is steeped in history, produced naturally, and enjoyed universally. Our meads are created with a passion for the land and in homage to the bees that keep the land going. Bottle pour at Sap House NoCo, pours a beautiful clear rosé. Aroma has gentle peppercorns, some tart cherries, and fermented out honey. Flavour is lush, with gentle cherries, wildflower honey, a touch of peppercorns, and light barrel. Richly flavoured without being brutal or too thick. Impressively designed. Excellent.

On tap at Sap House NoCo, pours a clear golden. Nose has plenty of cardamom upfront, accentuated by the vanilla and a touch of pear. Flavour is fairly thin, with lots of pear, a touch of cardamom, and gentle vanilla. A bit thin but reasonably cohesive. Pleasant.

Bottle pour at Sap House NoCo, pours a clear golden. Aroma is full of orange zest, amaro, bitter citrus, and wildflower honey. Flavour is quite bitter and floral, with lots of amaro, orange zest, plenty of bitter, and wildflower honey. Soft, floral, and well-integrated. Very good.

Bottle pour at Sap House NoCo, pours a clear golden. Aroma has plenty of big boozy bourbon barrels, moderate honey sugars, and touch of maple. Flavour is rich and woody, with big bourbon barrels, wood, booze, rich wildflower honey that somehow manages to be restrained on sweetness. Really woody, fairly boozy, quite complex. Not world-class, like Schramm’s or Marlobobo, but I’m not going to complain. Excellent.

Bottle pour at Sap House NoCo, pours a beautiful clear burgundy. Nose is full of rich bramble berries, a touch of maple, deep honey, and booze. Flavour is fairly rich, but the sweetness is admirably restrained, with plenty of bramble berries, berry pie, a touch of maple, and somewhat fermented out honey. Nicely constructed but I want more depth. Very good.

12 oz can. Aroma is a huge amount of cinnamon. In the flavor the cinnamon is soft with honey down played and shows good apple characteristics. Spice is not overwhelming. At 6 % it is pretty easy drinking.

Can, don't remember if it was dated, from the shelf, drunk July 2024. Clear, bright blueberry-violet with cranberry hues. Nose is piquant and full of fairly authentic fruit. Clean enough. In the mouth there's a burst of big sweetness before it dries out somewhat, leading to a fair bit of acidity and a medium to medium-light body. Importantly, it's clean and not cloying. Really need to try some of their high-end meads.

5 oz draft. Aroma is a good amount of raspberry with the expected honey. Flavor follows. To say this has a jam quality might be stretching it a bit. But it was pretty easy to drink.
