On tap at Le Saint-Bock, pours black with a small beige head. Aroma brings out gently roasted coffee with a touch of graham cracker, and I can't shake a black pepper note I get. Flavour is much the same — there's undeniably that black pepper character, along with tempered with gently roasted coffee. Not sure I can detect the graham cracker. Thick palate, but it's not that complex or layered. Not bad, but didn't quite live up to what I hoped for.

On tap at Le Saint-Bock, pours a deep dark mahogany with a small beige head. Aroma is complex and integrated, with maple syrup, Belgian yeast, and a nice earthiness that must be from the mushrooms. Flavour is certainly unusual, with lots of fungal earthiness from the mushrooms, tempered maple syrup, and Belgian yeast. I guess it's the mushrooms that reign in the sweetness, which works. It's an usual beer for sure, but I think it works. Creative and well-made despite the bizarre ingredients.

On tap at Le Saint-Bock, pours black / dark brown with a tiny head. Aroma is timid, with toasted malt and gentle earthiness. Flavour is a bit powdery / chalky, with some dusty dry cocoa and muddled earthiness. The oats don't impart that heartiness one would hope for in the style. Off the mark.

On tap at Le Saint-Bock, pours a clear amber orange with a small white head. Aroma brings out orange rinds, piney and resinous hops, and crisp biscuity malt. Flavour is along the same lines, with piney and resinous hops, backed by bready caramel malt. Old school, with those chewy malts providing excellent support for the vibrant hop resins. Now this is a great old school west coast IPA.
