Founded in 1997 by Jérôme Rebetez, who had formerly been trained as an oenologist, this tiny brewery has rapidly become known for making beers that stretch traditional beer style guidelines and use unorthodox ingredients. BFM's products are made in small batches and hand-packaged at the brewery.

Draught sample at Hoppy Beer Fest in Tel Aviv. Murky brown. Vinegar, malt, red fruits, caramel, funk, wood, sour, acidic, a bit of alcohol.

Hazy rusty brown colour with no head. Aroma is woody and slightly vinegary. Interesting mix of intensely full bodied malt base with sharp vinous acidity. Not too harsh though.

Amber, hazy, no head. The aroma has a nice woody character, subtle balsamic, mild barrelly vinegar. On the palate, it's tart, but restrained in that tartness. Sweet malts, good complexity of barrel character... I imagine that was the vin jaune.

375mL bottle, pours a clear dark amber with a tiny beige head. Aroma reveals balsamic, some sweet dessert wine, and a touch of oak. Flavour is tart, acetic and complex, with plenty of sweet dessert wine, balsamic, tartness, and oak. It's definitely acetic but fittingly so. Finishes tart, acetic and sweet vinous. Very good.

Bottle sample at a Kobi tasting at Berlin Florentin. Hazy amber. Vinegar, cookies, malt, wood, wine, funk, sour, sharp, rounded, alcohol note. Very good.

RBESG 2023, Zagreb Grand Tasting. Thanks! Murky muddy ochre to brown colour. Cheesy and fruity aroma, dried fruit. The flavour is caramel, dried fruit, lacquer, sour apricot. Acetic acidity. Puckering, light body, soft to moderate carbonation, sour finish.
