Description
Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

440ml can. Pours thick opaque orange with no head. Aroma is light sour coconut, manago and banana. Taste has mango, coconut and vanilla throughout. A little overripe mango and peach on the finish.

330ml can. Poured almost black in colour with a thin broken tan head. The aroma is roasty, nutty, hazelnut, chocolate. The flavour is strong sweet, with a rich, smooth, roasty, chocolate, sweet sugary, nutty, boozy liquorice bitter palate. Over medium bodied with soft carbonation and an oily mouthfeel.

St Anne's Summer Seaside Day.Out Beer#4. Black without much head and sticky-sweet in texture and taste. Booze, chocolate, coffee, liquorice, the mix works well. Less well is my decision to order and drink in the sun on a very hot summer day. There's definitely more suitable, but this is top-notch stuff whatever the season.
