Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Sampled at Billies, day 2. A bit cloudy golden color, average sized white head. Aroma is weird. Jam maybe. Odd. Flavor is off too. Very weird and indescribable. Yuk. 6-4-2-5-3

Black with a dark beige head. Medium to full body. Chocolate, sweet caramel, vanilla, and if I squint hard enough there is just a touch of red fruits. I guess it’s as advertised but it comes across as overly sweet, overly simplistic, and quite dull. Some will love it but I am an old curmudgeon.

Aroma of chocolate and roasted malts
Flavor is sweet, roasted malts hint of sweet cherries, lots of dark chocolate, ends chocolate and roasted malty. Tastes like a soft fark chocolate cake with a few candized cherry pieces on top

44cl can from AbeerVinum, Rimini, Italy. Pours dark orange gold, with limited fine white foam. Aroma is intensely fruity, strawberry, tropical, a little peppery. Body and carbonation are average. Taste is medium sour. Final is average.

Shared with my wife on a Saturday evening. Lovely sour: medium acidity balanced by a nice, gentle sweetness, intense raspberry which carries the beer, a little bit of chocolate that goes well with the raspberry and a gentle heat from the chili without any vegetable distraction. Well crafted and delicious.

Can from Three Hounds Beer Cafe & Bottle Shop. Nose is dark chocolate, hazelnut, raisin, caramel, toffee. Taste is an intensity sweet mix of the above. Boozy warming alcohol infusion.

Can, thanks Fin! Dark, no head. Coconut, tonka, cookie dough, coffee syrup, ice cream. Oh this is sweet. This one can't be solved by vanilla ice cream. I could imagine it as frozen little ice cubes, and then in my cold coffee.

Ooookay added vanilla ice cream. Now it is lavender clove beer. "Interesting."

Can from Eltham Wines. Nose is black cherries, vanilla, chocolate, dark berries, nuts. Taste is vanilla, black cherries, definitely some cocoa, chocolate, spot of cookie dough. A lot going on in here. Nice flavour combo. Rich sweet warming finish. Nice.
