Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Wee can, thanks Fin! Black, quickly collapsing brown head. Warm spices, chocolate, licorice nose. Sweet cocoa base, coffee sirup sweetness, gingerbread spice, buttercream and whipped cream. Fairly indulgent and sweet, fun in small measures, otherwise quite diabeetus.

I added this to the beer calendar that I curated for Loz and this was the Day 7 beer however not consumed until day 12 as we shared this Friday 12th December 2025, cooking Thomasina Miers Picadillo (Mexican Chile) however this is for other meals, we were actually having Dishoom Masala Prawns and another curry of Masala Chicken with Pulau Rice and Poppadoms and Raita, however the poppadoms filled us up 🤣. 🎧 to Afrodeutscha on 6Music. Pours pitch black, inky black, there was a head but it disappeared rapidly. Nice aroma, toffee, peanut brittle but a touch artificial, I like it but it's not quite right. Taste is hugely sweet, it's a great beer but wow unbelievably sweet, thickness in the mouth, huge toffee and caramel. I've got to give it a good score because it's a good beer, but, it's unreal....too sweet. Score 7.0

Pours pale, muddy reddish brown with a mis-sixed head. Aroma is strawberries and bubble-gum. Body is a bit on the thin side. Flavour is strawberries, vanilla ice cream and bubblegum.

On tap at Cardinal, Stavanger. Black colour. Aroma and flavour of roast malts, brown sugar, lactose and spices (particularly ginger and cinnamon, possibly also cardamom). EXTREMELY sweet - should be served in small glasses.

This is a mad beer if it’s a beer at all. Everything about it says smoothie fruit drink, down to having to shake the can to get the thick bit at the bottom out. Sweet, fruity, slightly sour, tastes like you should have it for breakfast. The other mad thing is it’s lovely, fruity sweet with a hint of malt, definitely tangs the senses.

Crushed strawberry colour with a minimal head. Aroma of raspberry. Flavour and texture are crushed raspberry and strawberry with a vanilla base. Bitter fruit back

Notater fra Mi2 juleavslutning, hvor vi alle møtte feststemte og med relativt uthvilt lever. Anført av seremonimester Melberg startet vi som vanlig med fatølene, og dette er kveldens siste av disse: brunsvart med ok skum. Gingerbread indeed (ingefær, kanel, kardemomme osv), sjokolade, kokos og vaniilje. Alt for søt, men som en dessert i små glass er den velkommen.

Anført av seremonimester Melberg startet vi som vanlig med fatølene: uklar rosagylden med fint skum som varer. Bringebær, kokos og lys chokolade. Fin syrlighet, slank og forsåvidt lettdrikkelig, men best i (svært) små glass. Stor uenighet rundt bordet om denne.
