Description
Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Tap at Winter Affair 2026. Someone had me try it while I was preoccupied with two others, hah... just noted that it's a very good hazelnutty stout. To be rerated if given the chance.

Black topped with a light khaki cap that thins to a swirl.
Nose is chocolate, nutty, almond, dark malts, light spice.
Taste comprises cacao nibs, honeycomb, spice, dark malts, nutty, booze.
Full bodied, light oily feel, semi drying close with a balanced rising boost.
Tidy pastry.

Keg draught at the Needle and Pin, Loughborough. Dark brown, almost black and mostly opaque with very little head. Vinous aroma, light sourness with an overlay of coffee. Complex taste with a gooey coffee sweetness, some Marmite, cooking chocolate, Amaro bitterness. Thick, thick body with low to medium carbonation. Ooooh. Special.

Tap at Winter Affair 2026. Golden-orange body, off-white head. Yeasty aroma, coriander. Yeasty taste, coriander, bit meaty (autolysis?), sweetish, bit herbal, smooth, weird umami notes... emm... not thrilled.

Tap at Winter Affair 2026. Red, pinkish body, pinkish head. Smooth, sweet aroma, more dragon fruity than the average dragon fruit. Creamy, smooth taste, dragon fruit all over the place, the peach and vanilla backing it up, low carbonation. Tasty, if very much not beery.

Tap at Winter Affair 2026. Murky orange-golden body, off-white head. Caramel-driven aroma, smooth, buttery almost. Smooth taste, heaps and heaps of caramel backed by citric notes, heading into a bit tart finish... okay, but really not something I enjoyed in the end...

On tap at Brewdog Soho. Certainly a cherry cola nose, yes there's vanilla in there too. Cherry Cola flavours, vanilla backdrop. Long sweet finish. Cherry cola bottle sweets in a glass.
