Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Aroma: Lactose and roasted malt with vanilla caramel. Flavour: Very sweet with lactose, caramel, brown sugar and notes of nuts. Aftertaste is sweet and very lightly bitter.
Colour: Dark Brown with a fading head.

440ml can from Benny’s Place, Kuala Lumpur. Poured a murky dark reddish pink colour with little life. The aroma is milky and big raspberry. The flavour is moderate sweet and sour, with a smooth, super rich, tart raspberry, sweet white chocolate vanilla palate. Full bodied with flat carbonation. It’s nice, but is it even a beer?

Can from Sainsbury's, Wycombe. Purpley red with a pale pink head and an obvious fizz. Blackcurrants, cream and blackcurrant leaves. Moderate sourness. Bit too fizzy for my liking, and certainly one-dimensional, but very enjoyable nevertheless.

Pitch black topped with a tan cap that thins to a swirl.
Nose is chocolate, raisins, light honeycomb, dates, toasted brown sugars, winter spice.
Taste comprises chocolate shavings, hint of marzipan, dark malts, spice, dried fruit esters.
Full bodied, fine carbonation, light drying close tempered with a balanced rising boost.
Solid kit.

black topped with a tan head that soon vanishes.
Nose is chocolate, honeycomb, light booze tunes, dark malts, molasses.
Taste comprises Crunchie bar, toffee, chocolate melt, honeycomb, molasses, brown sugar melt.
Full bodied, oily feel, semi drying close with a balanced rising boost.
Fun pastry impy if a little overly sweet for my palate and needs some balancing aspect to the sweet onslaught! Sips fine for 15% though!

330ml can from Waitrose in Rickmansworth, Herts. A dark brown/black coloured pour with a thinnish beige head on top. Rich, sweet, chocolate, ginger, cinnamon, caramel, spice taste, aroma something similar. Really enjoyed this one.

Can shared. Thick red to purple color. Aroma and flavor are, well, liquid jam basically. Okay. 8-5-6-7-5
