Description
Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Can. Near opaque dark brown beer, small bubbly tan head, doesn't last. Smooth palate, a mild viscosity and commensurate amount of fine carbonation. Overall, feel pretty light for an Impy clocking on at 14%. Smooth and rich dark chocolate malts run seamlessly with dark malt cream. Total adjunct fest! I can taste coconut, caramel, maple, coffee, vanilla and cinnamon. Impressively, no one element totally dominates, rather they are bit part players in the overall movie. If historians ever study this craft beer wave, clearly on the wane now, they would be entitled to point at this brew and describe it as the defining adjunct laden imperial stout. Amusing.

Can that Em gave me (bought from Waitrose) - thanks Em, although I know you only got it because you like stealing large tasters of my pastry sours! Murky purpley-red colour with a barely-there baby pink head. Tastes of blackberries, strawberries and rhubarb, with creamy vanilla, yoghurt and sponge cake coming through. There's a light hint of cinnamon in the aftertaste. The mild sourness balances out the fruit sweetness well, but as usual in such brews I feel that the sourness (mild though it is) clashes somewhat with the vanilla and cream. As a result this is far from being my favourite from Vault, although it's perfectly drinkable. Em loved it though!

Can at home. Black color, no head. Aroma is nutty, hazelnuts. Flavor is malts, nuts, hazelnuts, vanilla. Hmm exactly what the label says but it's not really my thing.

440ml can @ Tim's place, Gent. Pours a hazed reddish pink, white foam atop. Smells wondrous.. stewed red berry fruits, crumble fruits, crumble.. flavour continues with prominent strawberry mush, perhaps a light cinnamon suggestion, well presented.. others weren't too keen, but I liked it. Good stuff

330ml can @ Tim's place, Gent. Pours dark, small tan head. Welcoming nose bringing confident toffee and especially prominent hazelnut coffee syrup, milky latte just about gets a foot in the door on the finish. Very sweet, boosty, slick full bodied sticky mouthfeel. Glad I didn't sink a full can myself.
