Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.
Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

330 ml slimline can, as Vault City Toffee Nut Latte Imperial Stout, from Vinmonopolet Stavanger Tasta. ABV is 11%. Pitch black colour, minimal brown head. Distinct aroma of roasted nuts, peanut butter, toffee and chocolate, also roast malts, vanilla, lactose and hints of coffee. Very sweet flavour with the same elements. A dessert stout for sharing. I won't buy again.

Vault City Tins at Home Beer#3 of 3. Hazy golden-amber in colour. An interesting brew to say the least. Dryish coffee dominates the fruitiness in this one, which is best in its sour aftertaste, but in terms of aroma and taste it's the aforementioned which provides the character for this fairly strange act of brewing. It works though, somehow.

Vault City Tins at Home Beer#2 of 3. Poured a hazy light gold initially, when I refilled the glass emptying the bottom of the tin this it turned into a cloudy murky golden colour. This didn't change the rich taste of this pastry sour, with its apple strong, and the cinnamon and vanilla impactful. There's plenty of aroma in this respect too.

330ml can. Pours jet black with a thin head. Aroma is dark chocolate and raspberry seeds. Taste has dark chocolate throughout with some sweet raspberry on the finish. Not as sweet as a lot of pastry stouts.

Tap at Drinkøteka. Murky golden-orange body, off-white head. Heavy candyish honey notes over some sugary mango and apple in the aroma. Bit spicy honeyish taste, smooth, lightly vegetal, mostly sugary apple and vague mango. Okay, bit flawed.

Vault City Tins at Home Beer#1 of 3. A nice easy starter before the sour brews. There's plenty of citrus in here, with the pineapple and grapefruit both evident and acting as sweet and sour elements for this radler. It's aroma is not as stated, and its texture has a dryness about it.

Tap at Pastryccioni Festival, in Rimini, Italy. Pours greenish, fairly transparent, with fine white foam. Aroma is herbal, medicinal, a little balsamic, a mix between melon and mint. Body and carbonation are average. Taste is medium sweet. Final is average.

Bottle shared at Anti-Carnavalstasting 2026. Opaque black color, small off-white to beige head. Smell and taste malts, light sweetness, light vanilla and some red fruit notes with some caramel. Solid beer definitely.
