Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

440ml can. Pours pinky orange with a small head. Aroma is light sour smoke with some tangy red berries. Taste has sour smoke and red berries to start. Tangy sour smoke finish.

30th December 2025
Can. Pretty much a clear deep amber brown beer, small bubbly pale tan head. Smooth and slightly viscous palate, decent fine minerally carbonation on the back end. Big ice cream van chocolate syrup. Some sort but genuine vanilla. Plenty of honey. Nuts, maybe a little. Hangs together well. Some ripe banana tomes from somewhere on the fairly light finish. Amusing for sure and pretty drinkable all things considered.

Head fizzes out quickly. Of course it’s very sweet. Has some rounded sugary dark malts, a few dark fruits, roast, mild earthy bitterness. A little Turkish coffee. Sticky finish. Just about drinkable but there’s zero complexity here.
