Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

330ml can from Waitrose in Jersey. Pours a very dark brown with an off-white head. Aromas & tastes of cinnamon, clove, ginger, milk chocolate, coffee & light lactose. Medium body. Smooth finish.

Can from Havnens Vin Og Tobakhus. Pours muddy dark reddish copper with tiny white head. Aroma is intense sweet cherry, dark chocolate, cocoa, milk, vanilla, and ground coffee. Taste is medium sweet, faint bitter and medium acidic. Body is oily with light carbonation. Finish is long and balance sweet and sour with notes of cherry, candied cherry, cocoa, chocolate, coffee, vanilla, vinegar and sour cherries. Very well balanced

To be fair, it does exactly what it says on the tin. And does it well. Lovely sweet and tangy and jammy berry character. Low acidity. Raspberry, strawberry. Cakey accents. Not overly sweet. Drinks quite well for what it is. Very enjoyable.

Pours purple-brown wth a small head. Aroma is toffee, lactose, biscuits, vanilla, raspberries and strawberries. Thick mouthfeel. Sourish taste with notes of raspberries, strawberrries and vanilla ice cream.

Frothy fair fully diminishing head. Amber colour. Heavy malty and light hoppy aroma. Some hazelnut notes. Moderate bitter intense flavor. Long moderate bitter finish. Creamy palate.

Lime green with a good head with good retention. Nose is intense lemon with lime on top. Tart, sour taste, lemon, lime, sour beer, some sweetness. Well balanced actually. Interesting novelty and skillfully done, but not something I would come back to very and over.
