Description
Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

On tap at Cardinal, Stavanger, as Vault City Eazy Breezy. Clear green colour. Aroma and flavour of lime and honeydew melon, more or less artificial. Medium sour, lactic acid. Not undrinkable, but not something I'd buy again.

Pitch black topped with a khaki cap that thins to a swirl.
Nose is big on hazelnut, dark malts, chocolate shavings, toffee fudge.
Taste comprises sweet malts, vanilla, caramel, nutty bite, molasses.
Full bodied with bite, light oily and slick feel, semi drying close with a balanced rising boost.
Okay sipper but overly sweet and lacking some balance.

Tap @ Mig & Ølsnedkeren. Hazy golden with a white head. Aroma is sweet, malty, heavy caramel, butterscotch, fruity and light tart. Flavor is quite sweet and slightly acidic. Sweet finish. 130626

Tap @ Mig & Ølsnedkeren. Hazy toxic green with a white head. Pretty close to the popsicle. Aroma is sweet, pear, guava and light tart. Flavor is quite sweet and light acidic. Dry and light acidic finish. 130626
