Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.
We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

330ml can from Leith Bottle Shop. Gluten Free. Pinkish tinged golden colour, foamy head and aroma of malt, rice, plum. Taste is malty, rice, floral fruity, cherry blossom hint, plums, honey, with some sour citric acidity and tangy bitterness. Light bodied, soft carbonation, dry sourish & bitter finish. Nicely drinkable.

[33cl can brewed for Beer52.] A bright straw coloured pour with a fast fading white head; fresh citrus and berry fruit aroma with some damp grains in the background; rather watery with some sweet red berries, then some chewy malts. Quite satisfying but rather thin.

Can from Appellation Wines. Appearance - golden with a very slight haze and a nice foamy off-white head. Nose - toffee, bread, oatcakes and orange. Taste - caramel and bready with some orange at the back. Palate - medium bodied, creamy texture, dry-ish finish. Overall - decent.

Can from Appellation Wines. Appearance - golden with a reddish tinge. Big, fluffy white head. Nose - plum, rice cake and subtle cherry. Taste - rice, bread and plum. Palate - light bodied, some sweetness and then a dry finish. Overall - sufficiently beer flavoured to be enjoyable.

Can from Against The Grain. Clear deep golden body with an off-white head that slowly fades. Steady carbonation. Patchy lacing. Aroma of roasted malt, biscuit and brown bread. Flavour of earth and shortbread. Medium body with a slick texture. Soft fizz. A well made, biscuity lager.

Can from Appellation Wines. Appearance - golden and clear with gentle carbonation and a big foamy off-white head. Nose - burnt brown bread and toffee. Taste - smoke and brown bread. Some citrus, banana and toffee too. Palate - light to medium bodied, creamy sweet middle. Some dryness on the finish. Overall - good.

Can from Appellation Wines. Appearance - pale, golden, clear and bright. Nicely proportioned foamy white head. Nose - corn bread and brown bread. Some bitter salad lurking. Taste - honey, caramel, popcorn and general breadiness. Palate - creamy in texture, medium bodied and finishes a bit sweet, which I guess is on the style. Overall - quite nice.

Light, hazy golden beer. White head. Light ginger aroma. Flavour is mild. But has ginger, some spice hops, bit of zest. Very mellow, super drinkable.
