Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.

We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Bottle from Cornelius. Pours hazy yellow gold with a thin white head. Aromas of pineapple, grapefruit, light spice. Taste is light sweet up front, pineapple cubes, then drying out on the finish.

Keg at The Hanging Bat. Murky orange body with a thin beige head. Faint lacing. Aroma of minerals, cranberry and grass. Flavour of grapefruit, sour lime and salted orange. Thin to medium body with a slick texture. Light fizz. A tart IPA. Weird but interesting.

Keg at salthorse. Pours deep orange, nose is cheesy, savoury, taste is grapefruit, orange rind, bitter, savoury, hints of burnt rubber.

On keg at Six Degrees North, Edinburgh. Appearance - golden with a decent head and a slight haze. Nose - pineapple, light resin, some grapefruit. Taste - pineapple and grapefruit again. Lime and resin on the finish. Palate - close to medium bodied. Creamy middle and nicely tapered finish. Overall - lovely.

Keg at Fierce. It pours cloudy deep golden with a small white head. The aroma is sweet, banana milkshake, bubblegum, pineapple and gooseberry crumble with custard. The taste is firmly dry, bitter, pithy, tannin, straw, pink grapefruit rind, green grape, gooseberry, tart fruit skin, lilt and fruit smoothie with a dry finish. Medium body and fine, foamy carbonation. Pretty bonkers stuff. Loads going on. Dude next to me doesn't like it, but I do. Crazy.

Bottle big thanks to Nick. It pours cloudy red with a small white head. The aroma is sweet, juicy, tangy, red grape, red apple skin, musty, touch of hibiscus, spice and dull jam. The taste is dry, bitter, sweet, boozy heat, tangy, red fruit, red grape, jammy berry, fruit cordial, spice, gummy bears with a tangy fruit finish. Medium body and fine carbonation. Quite boozy and jammy. Not as much depth as expected. Jammy and boozy. Fun nonetheless.
