A complex DIPA with loads of everything. There are aromas of passionfruit, pineapple, grapefruit, honey and honeydew. There is also a little pepper in the mouth and some peach coming through as well. There are layers of flavour to this one. Brilliant.

Area only under a watch and act at the moment. Bottle. Clear reddish amber with a wisp of beige head. Aroma of marzipan, whisky, brioche, vanilla, white pepper. Just short of syrupy, low carbonation. There's plenty of whisky influence but the big sherry, toffee and bread malt side of things nudges it to the side. It very rich but only fairly sweet and bitterness, spice and a rolling swell of boozy warmth (nothing integrated, mind) tamp things down effectively. Deep but not suffocating. Really good.

Can. Hazy gold. Big orange nose. Big orange flavour. Chewy. Juicy. Some lingering afterburn, but now real bitterness iat drinking moment. Smack on style I guess but doesn't really wow.

Bottle. Slightly dull amber with a creamy head that laces well. Aroma of oranges, bread, woody spices. Dryish with spices and grass as well. There's not a lot of the citrus - so that you can see why brewers are blithely bunging in lots of modern hops - but there is an intriguing openness to the palate that's fruity before herbal and woody spices grip a little at the end. Interesting, rustic, respectful.

Bottle from Slow Beer, Fitzroy, Melbourne. Poured a clear dark brown colour with a thin broken off white head. The aroma is roasty malt, caramel, liqouirce, alcohol,. The flavour is moderate sweet, liqouirce bitter, with a roasty, liqouirce, chocolate, woody, slightly peaty, warm boozy alcohol palate and a lingering alcohol bitter finish. Full bodied with flat carbonation.

Bottle from Slow Beer, Fitzroy, Melbourne. Poured a clear chestnut brown colour with a short-lived frothy off white head. The aroma is light toffee caramel malt, nutty, woody hop. The flavour is moderate sweet light bitter, with a smooth, rich malty, sweet caramel, light resin, woody hop bitter palate. Medium bodied with average to soft carbonation.

From a 330ml bottle on 14/8/2019. Pours a deep brown with a smallish tan head. The aroma is strong with lots of vanilla against a background of coffee. Tastes of sweet milk and dark chocolate, and vanilla, with lots of strong coffee in the background and mild roasty bitterness. The texture is quite creamy with the lactose coming to the fore. The carbonation is moderate. Very tasty and well made.

Bottle. Black with a fading light tan head. Aroma of licorice, ginger, quite heavy lavender, some orange and dough behind. It's like a saison meets a dark 'n stormy. And it continues so to be upon a taste except the lavender unfortunately becomes more prominent. Nicely judged bitterness (even this late). Reminds me of Bacchus / Beard & Brau St Bernard Saison. Weird but not bad. Not far off weird but good.

From a 330ml bottle on 6/8/2019. The 2018 version was an absolute cracker so this has a lot to live up to! Pours close to balck with a small tan head. The nose features some chocolate with a lot of oak and a touch of booze. Very intense flavour wise, with lots of dark and milk chocolate, heaps of roasted and charred malt, masses of oaky booze, and a pretty sharp bitterness. The palate is slick and the carbonation moderate. Broadly true to style for an RIS, but could be a lot smoother and more cohesive. Not a patch of the 2018.

On tap. Black. Finely beaded almost brown head. Surprisingly subdued nose with some wafts of vanilla and dried fruit. Flavour aplenty on tasting however. Vanilla, cinnamon, raisins, and some bourbon characteristics. Lush and worthy of some cellaring.
