Cidermaker Mark Jenkinson offers you a unique backstage pass into the world of traditional farmhouse cider-making at the home of the multi-award-winning Cockagee Irish Keeved Cider.

Mark has a small family farm in The Boyne Valley in Slane Co.Meath - 12 acres of orchards.
• His ciders are farmhouse crafted ciders, handmade and pressed.
• They are made from 100% apple juice.
• Naturally fermented- no added yeast culture.
• Gluten free- vegan friendly.
• The apples are grown using organic and biodynamic methods.
• They are low in carbonation for better flavour and enjoyment.
• They are unfiltered & unpasteurised.
• No electricity used- he uses gravity to blend the apples- real old school style.
• He uses a rack and cloth press- they have been used for 2000 years and its a very traditional method for pressing apples- not many people use them anymore but you can get a great quality juice from them.
• From pip to sip, any apple waste is reused by using it as compost in the orchard or being given to neighbour as cattle feed.

Bottle from a supermarket. Mentioning spontaneous fermentation on the bottle was the selling point for me, although it’s quite misleading as such. No funk whatsoever, biggest upside is that it’s not overly sweet and has some okay tannins to it too, but it’s very far from interesting, an okay supermarket cider at best

50cl bottle, no BB.
Paille claire, col fin blanc retombant vite.
Arôme est excellent sur le nez frais de pommes, verger, fruits vert, léger côté caramel - fraicheur fruitée, petite douceur rappelant un léger miel organique - honeydew/melon avec une note acerbe fine de pomme.
Palais est fin acerbe, pomme verte, petite douceur, chair fraîche avec une petite note sucrée-caramélisée. Le seconde presse apporte un peu plus au niveau du sucré tout en gardant le côté acerbe et finement amer.

Clean gold with a thin head. Aroma of dank apple. Flavour is applewood, dry barrel cider, full dry finish.

Very short-lived rim on clear metallic red-copper liquid, no visible carbonation. Very aromatic apples' nose, more depth than in most cider, complex. Very perfumey-aromatic wafts, old apple skins, bit of caramel. Sweet and tart at the same time! Very unique sensation. Very intense, quite sweet apple flavour, but absolutely not syrupy or cloying in any way. As said, the MF is something unique. Come across this? TRY!
