At Brasserie Simon, we take the time: our fermentation process is still separated into two stages as we did always: a main fermentation in open vats which is followed by maturation in closed vats. A small craft brewery since 1824, Brasserie Simon is the only brewery in Luxembourg to have the latest generation open fermentation tanks guaranteeing the taste of real beers from the past.

Tap @ SO Slightly Off, Luxembourg. Clear golden with a white head. Aroma is sweet, malty and light hoppy. Flavor is medium sweet and moderate bitter. Sweet and moderate bitter finish. 090725

Tap @ Rock Solid, Luxembourg. Hazy golden with a small white head. Aroma is sweet, malty, light mango and light hoppy - fruity. Flavor is medium sweet and light bitter. Dry and light bitter finish. 090725

Pale gold with a thin, frothy head. Aroma moderate grassy, faintly metallic, faintly pepper-like. Taste is moderate bitter with a crisp finish of moderate duration and a touch of a citric twist. Body stays light, texture is moderate watery, carbonation prickly. Was prepared to dislike this one, a supermarket bier in a cheap aluminum bottle, but in the end it proved tolerable, if a bit rough.

Old rating from 2016 - 330ml bottle brought back from Lux by my wife. Pours golden with a white head. Aromas & tastes of citrus, pine, flora, grain & malt. Moderate body. Light bitter finish
