Description
A modest jewel in the Luxembourgish brewing world, Brasserie Simon is both a keeper of the soul of good beer and a creative rebel. Rich in its independence, the company emphasizes the quality of its products and customer service to strengthen its Luxembourg roots.
At Brasserie Simon, we take the time: our fermentation process is still separated into two stages as we did always: a main fermentation in open vats which is followed by maturation in closed vats. A small craft brewery since 1824, Brasserie Simon is the only brewery in Luxembourg to have the latest generation open fermentation tanks guaranteeing the taste of real beers from the past.

(Bottle 33 cl) I’ve had spelt-beers from Belgium and Germany before, but this blend of 70% barley-malt and 30% (unmalted?) spelt is pretty unique I believe. Beautiful yellow colour, unfiltered. Decent Head. Curious - but not unpleasant - smell that seems familiar, I don’t remember from what though. In the first mouthfull this has a pilsener-presence, but the spelt adds a spicy edge. Quite interesting variation of a pils. 260601

(Bottle 33 cl) Beautiful fully golden Pilsener pretty much without any head at all. Neat, fresh and quite aromatic with a pronounced yet discrete hoppiness. Perhaps the Luxembourgers are not the most innovative brewers in this world, but what they do, they do well. And their Pilseners are mostly very pleasant. 170701

(Bottle 33 cl) Dark golden pils-type with almost non-existing head. Malty with a dry but not overwhelming bitterness. The label says "biere spéciale de haute densité". A guess it’s just a sophisticated (try saying it loud....) way of saying that the brewmaster has used a bit extra pilsener-malt. 310701

Bottle 0,33ltr: Hazy yellow colored brew with an slightly dry bitter taste, very grainy hints due the use of the spelt grain.

Can 0,5ltr: Clear golden colored brew with an well balanced bitter taste, very refreshing with some hoppiness. Quite good Pilsener from the Grand Duchy of Luxembourg.
