At Brasserie Simon, we take the time: our fermentation process is still separated into two stages as we did always: a main fermentation in open vats which is followed by maturation in closed vats. A small craft brewery since 1824, Brasserie Simon is the only brewery in Luxembourg to have the latest generation open fermentation tanks guaranteeing the taste of real beers from the past.

0.33 l bottle from 'Pall Center', best before December 2024. Clear, golden with a large, frothy, slowly diminishing, white head. Sweetish, slightly malty and a bit grassy aroma of grains, some straw and light lemon peel. Gently sweet, malty, moderately bitter and a bit grassy taste of grains, some straw and traces of lemon peel, followed by a short, moderately bitter finish. Medium body, smooth and slightly effervescent mouthfeel, average carbonation. Well-brewed lager, fairly clean, much better than the ratings suggest.

0.33 l bottle from 'Cactus' (Redingen), best before August 2024. Hazy, golden yellow with a medium large, frothy, almost stable, white head. Sweetish, gently fruity-floral and slightly grassy aroma of orange peel, grains, some banana and traces of coriander. Quite sweet, malty, moderately bitter, slightly fruity-floral and a bit grassy taste of grains, orange peel, some banana and light coriander, followed by a short, moderately bitter, slightly dry finish. Medium body, smooth and gently effervescent mouthfeel, average to lively carbonation. Solid witbier, nicely smooth and refreshing, not too spicy at all.

0.33 l bottle from 'Cactus' (Redingen), best before July 2024. Slightly hazy, golden yellow with a medium large, frothy, slowly diminishing, white head. Sweetish, quite fruity-floral, slightly grassy aroma of lemon peel, honey and some vanilla. Quite sweet, malty, moderately bitter, gently fruity-floral, slightly yeasty and a bit grassy taste of honey, lemon peel, light vanilla and some clove, followed by a short, gently bitter finish. Medium to full body, quite effervescent mouthfeel, soft carbonation. Not that much of a Tripel, decent brew anyway. Quite fruity and well-balanced at least.
