Casita Brewing Company is owned and operated by Ryan and Mahalia Witter-Merithew. Ryan is a seasoned brewer, having worked as a professional brewer in Denmark, England, and of course, the United States over the last thirteen years. Mahalia is the heart of the business and the president of the company.
Casita started as a contract brewery at Hill Farmstead Brewery in Greensboro Vermont in 2015. In 2017, we moved this business to our home state of North Carolina, where we produced our beer at Duck-Rabbit Brewery in Farmville. In 2020, we are set to open our very own brewery and taproom in Mahalia's hometown of Wilson, NC. We will be open to the public by August 30th.
Over the years we have brewed over 50 different beers under the Casita name. Ryan is excited to bring this creativity to our new taproom, where we will be brewing some old favorites as well as some new beers we haven’t even dreamed of yet.
The logo for our brand is a letter 'C' in the shape of a little house. The 'C' of course stands for Casita, but it is our hope this 'C' will not only represent our brand, but a lot of our other favorite words that start with 'C', like craftsmanship, creativity, compassion, and community. These are the key principles of our business.

Can: Poured a murky orange with a frothy foamy white head. Aroma is sticky, juicy, hops, fruity, citrus, coconut, pineapple. Taste bitter hops that leaves way to fruit, citrus, mandarin, citrus, pineapple, coconut, very complex, lively finish.

Grapefruit, pear nose. Mostly clear amber but with a lot of fine sediment, medium head. Overripe orange, pear. Medium body, easy carbonation, warm.

Panda at home, thanks to the Wingmane, 14/01/24. Hazed orange with an off white cap that thins to a swirl. Nose is creamy malts, orange peel, melon, papaya, mandarin. Taste comprises orange pith, grapefruit, pine needle, citric tinged straw, faint minerality, sweet malts, papaya, grass, hop spice. Medium bodied, fine carbonation, semi drying close spiked with light juicy come grassy hop bitterness. Tidy enough DIPA if a little on the sweet side overall.

Panda at home, thanks to the Wingmane, 14/01/24. Moderately hazed golden orange with a good sized lasting white cap. Nose is candied fruits, herb, grass, sugars, lactic tang, marshmallow. Taste comprises creamy malts, candied citric rinds, bitter sweet edge, touch of apricot. Medium bodied, fine carbonation, semi drying close with a light puckering edge. Passable pastry sour.

Can. A- Roasty, coffee, dark cocoa. A- Black color, black liquid, beige head. T- Char, roasty, coffee, bitter, oats. P- Full body, creamy texture, average carbonation, balanced finish. O- Nice. Oats and lactose really smooth it out. Coffee is roasty and bitter. Decent stout, but honestly, needs more coffee.
