Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Pours a clear straw from a bottle, still. Buttery green apple aroma is faint, similar flavor. Good cider.

Refrigerated tall skinny clear bottle poured into a glass. Dark amber. Aroma is rich apple. , medium body, and syrupy texture. Taste is rich apple and apple brandy barrel.

Tall skinny clear corked bottle. Aroma is rich apple, medium body, and no carbonation. Taste is rich apple and oak.

Pours hazy pale yellow into a shaker. No head. Tart apple and dusty peel aromas. Dry with oak and dusty apple front to back. Medium length dry peel finish.

Pours a nice hazy amber from a bottle. Maybe I got a bum bottle, but this was not great. Aroma is burnt plastic over apple. Flavor is somewhat similar. In the mouth it really lets down, no carbonation as advertised, super tart yet watery over a horrible flavor, blech. I'm a fan of theirs and I'm not quite sure what happened here.

Tall boy from the Botanist AVL fridge, no advertisement for this one. Thanks @DiardmaidBHK for pointing it out. Bright, dessert apples, very floral. Tart, red delicious, light pithy bitterness, good acid, bite-y, very(very) similar to their other 4-pack offerings. Off-dry, minerally finish. Almost definitely back-sweetened. Thin, super carbonated, dusty, refreshing, easy abv. Good.

Pours a wonderful pale straw from a bottle. Apple aroma is somewhat reserved, but more present in the mouth. Flavor is definitely off-dry, sweetness lingers at the edges, tannins eventually coat the mouth after repeated sips. Very different and nice, though subtle. Pretty good cider.

Bottle from my lovely wife. Mojito glass @home. Clear, orange, flat, iced tea pour. Scent is subdued core, red apple sweetness, char & perceivably bittersweet fruit. Lemon iced-tea, lemon-honey, strongly bittersweet Lipton, coating burnt honey & teriyaki. Super acidic. Finishes popsicle dry somehow. Great texture. Slick, syrupy, not boozy, serious dry mouth finish. Good sipper.

Pours a nice light copper from a bottle. Very nice crisp apple flavor, a hint of the concentrated, almost oxidized note of an ice cider. Flavor is crisp, light. Very, almost too, effervescent. Pretty good cider.

Pours a nice clear golden yellow from a bottle. Crisp flinty aroma, apples of course. Flavor is nicely dry and tannic. Pretty good cider.
