Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

Sample thanks to Danlo: Poured a mahogany brown with a khaki head. Aroma is sugary, apples, fruity, molasses, boozy, woodsy, maple. Taste is sticky, dark fruits, apples, molasses, sugary, woodsy, boozy, sugary.

Pours a nice gold from a bottle. Initial aroma from the bottle is surprisingly sulfurous, slightly eggy? Once decanted that bloom largely disappears, leaving a slightly unctuous apple aroma and flavor. Slightly effervescent and with an acidic finish. Good cider.

Pours a lustrous still copper from a bottle. Nice concentrated apple aroma, enhanced with oak, not sure I'm picking up on many mead notes. Wonderfully crisp, sweet flavor. Great cider.

Pours a nice clear gold, still, from a bottle. Huge syrupy sweet smelling apple, a fair but not huge amount of oak. Similar flavor. Very good cider.

Pours a clear, still mahogany from a bottle. Rich, concentrated apple, some vanilla. Sweet, thick and syrupy, nicely balanced acidity, not treacly. Very good cider.

Pours a rich clear gold from a bottle, plenty effervescent. Nice crisp apple aroma over a backdrop of wildflower honey. Similar flavor, nuances of dry apples held aloft by sweet honey that fades into an interesting, fleet wild bitterness. Good cider.

Four pack from Appalachian. Stemless wineglass @home. Mostly clear & settled. Mellow gold body. Perfume-y, red-skinned apples & citrus-y hops. Acidic & biting upfront. Harsh orange pith hops that border on medicinal, juicy & floral apple. Menthol. Moderately tannic, lemon-y finish. Lingering flavors. Forced carb is okay. Thin body, but has some chew. I don't get the advertised hazy. This whole Harvest line is cheap & pretty good.

Sample thanks to Danlo. Cheers chap. Aged for 8 years in a French oak white wine barrel. Clear reddish mahogany appearance. Nose presents sherry, calvados, distant toffee apple, oak, apple concentrate. Taste is rich with sweet sherry, sweet apple concentrate, stewed dark fruits with a mild calvados warmth. Nice strength, not too full on. Lovely ice cider sipper with a great depth to its sweetness.

28/1/2022. Bottle sample courtesy of danlo, cheers Ed! Pours clear dark amber bronze with minimal head. Aroma is sweet apple, woody, toffee, apple pie, dried fruits, vanilla, brown sugar, baked apples. Lovely sweet and tart mix. Medium to full body, oily texture, low carbonation. Delicious tangy lip-smacking tart finish. Super enjoyable.
