Whether it’s changing careers, naming our brewery after a seemingly incongruous approach to beer, or donating 100% of every Temperance Trikonasana yoga class to a different local nonprofit each month, we like doing things differently.

Sample at Great Taste of the Midwest on 08/09/2014: Brownish-black color with a medium foamy tan head that diminishes gradually. Partial rings of lacing. Aroma of roasted malt, coffee and chocolate. Medium-bodied with a roasty malt and coffee character, with a bit of dark chocolate in the background. The mildly bitter with an espresso aftertaste. Above average overall.

Enjoyed from can at a friends place on a Friday night in Chicago, IL. Appearance is a moderately dark gold with a billowy white head. Aroma is malty with a light tropical backing, smells interesting. Taste is more English IPA, nice bitterness, overall good stuff.

Location: Draft at Monk's Pub, 7/8/14
Aroma: The nose is caramel and grainy malts, some decent hop notes
Appearance: Pours a dark reddish color with a beige head and some decent lace
Flavor: The flavor is solid and balanced, good malt presence, solid hop bitterness as well
Palate: The body is medium, a bit sticky, with a decent, but not amazing mouthfeel
Overall Impression: I thought this was a solid one, but it didn't stand out for me. It's a tough style to crack into. Needs a better effort than this to get a high score.

Aroma: The nose is tropical and fairly hoppy, some caramel malts as well
Appearance: Pours a murky looking orangish color with an off-white head and average lace
Flavor: The taste is a little sweet and a little bitter, balanced, nice, clean flavor
Palate: The body is medium, it has a decent drinkability, and average carbonation
Overall Impression: I enjoyed this one. A pretty solid example of the style. This one may not be a standout in the style, but it is a nicely made beer.

Location: Draft at the Hackney's Printers Row, 7/15/14
Aroma: It has a clean aroma, pretty light, some fruity sweetness, pale malts, and pineapple
Appearance: A gold-orange pour, with a white head, great retention, and fairly coating lace
Flavor: The flavor is light sweet, pineapple and grass, with a light-medium, clean, bitter finish
Palate: It is light and easy drinking, not watery, very clean, fresh, and with a light dry finish
Overall Impression: This is damn good. Super sessionable. Not too sweet. I don't know if this is canned, but it is a perfect beer for canning! At only 4% with that mouthfeel and balanced flavor, I could drink a ton of this.

Location: Draft at Rock Bottom, Chicago, 6/25/14
Aroma: Nose is light and sweet, melon is present, not big, but present, bready and doughy notes
Appearance: Pours an unclear orange with a lasting white head that leaves plenty of lace
Flavor: This beer has a clean, light hop flavor, it is medium sweet and light-medium bitter
Palate: It has an easy drinking feel, a fairly light body, and it has a tingly, but soft carbonation
Overall Impression: I thought this was okay, but I wanted it to be better. I mean, how great is that name? Anyway, mellon on a session IPA is a heck of an idea. Better execution could really bring this idea to fruition.

12oz pour at Binny’s into thin tall tulip. Completely black body with tan head. Aroma is strong: dry coffee pops first. The thing to a coffee beer is don’t fuck up the coffee and it isn’t. Very perfumey with roast coffee, no green pepper. Past that is a very well made impy stout, clean black malts, no ash or bitterness. Just fumy. Flavor has lots of coffee and less stout, almost a bit of a watery stout behind the coffee. Moderate acidity for the style. Kind of gets in the way of the mouth feel. Its too acidic and too coffee not enough stout in favor but it smells really well balanced. To be fair, I’m not a coffee beer guy but I didn’t know this was a coffee beer.

Aroma: The nose is basically rye weed, this one should have been my 420th rating
Appearance: It pours a dark reddish color with a thick beige head and some fairly heavy lace
Flavor: The taste is hoppy as well, plenty of rye bread, and a nice hoppy bitterness
Palate: The body is medium-plus, has a smooth feel, soft-to-average carbonation, and a dry finish
Overall Impression: I thought this was a pretty damn enjoyable example of the ESB style. You could certainly do a heck of a lot worse, style-wise.

Sampler at Rock Bottom Chicago. Very hazy pale gold. Mild lacing. Aroma is mild to moderate. Not as expected, new hop for me. Its a bit dusty, stale maltiness and the hop is a bit flabby. A very mild hoppy, rather neutral maybe a bit melon like. Flavor is a bit husky and heavy, not spry at all. A bit of a tropical rind character. Kind of just a blah beer with nothing directed or interesting. Hops aren’t bright, malts are husky and yeast neutral.
