Description
Our ciders are made with the wild apples and pears that grow on Salt Spring Island, and with apples from regional orchards. We never add any water. Our process involves slow-fermenting single varieties and allowing each to mature until it has fully developed. The ciders are then carefully blended for complexity and depth of flavour; our Dry and Semi-Dry ciders are each blends of over 10 different apple varieties! While the blending process is crucial (and arduous), the special character of our cider is due to the wealth of heritage cider apples that grow on Salt Spring, and to our commitment to making fully natural ciders. In general, you'll find that we tend to make our ciders quite dry, with delicate flavours (including our berry and plum ciders), and that's the way we like them!

375mL bottle, pours a clear dull golden. Aroma brings out treacle toffee, caramel apples, and some vanilla. Flavour is a bit phenolic, with treacle toffee, caramel apples and some perfumey alcoholic notes. Fairly phenolic, but warming, with a low-to-medium sweetness for an ice cider. Lovely stuff, but not quite on the level of Quebec ice ciders.

Bottle - Light green apple. Clear gold with a small white head. Crisp apple notes with a touch of skin and a light dry finish. Very slight acidity. Not bad.

Ruby color. Deep aroma, forest berries; fruity, a bit sour, some flowers and vanilla. Dry mouthfeel, a bit weak, but with a quite good elderberry flavor, I canβt really get much elderflower.
Good, but with some residual sweetness this would be much better.

Attractive red colour. No head. Nice berryish aroma, quite fruity, with a light flowery character. Fairly light body, and with quite a bit of berryish character. Light acidity. Quality.

Bottle at Salt Spring Wild, pours a hazy blonde with tons of sediment - looks pretty nasty really. Aroma is aggressive on the hops, with a ton of the Cascades coming through, with subdued dry apples. Flavour is along the same lines, with lots of dry floral hops that are rather astringent. Yeasty and messy. This is not a good example of a hopped cider.

Bottle at Salt Spring Wild, pours a cloudy pinkish amber with a small white head. Aroma brings out lots of flowery notes along with the berries, with medium sweetness. Flavour is medium-heavy sweet, with a good balance of the berries and flowers, finishing on the berries with moderate sweetness. Not much depth, but it's a pleasant fruity, floral cider.

Bottle at Salt Spring Wild, pours a clear pale yellow with a few bubbles. Aroma is bone dry, with champagne-like effervescence. Flavour is likewise bone dry, with dry green apple skins and a champagne-like carbonation. One-dimensional but refreshing and great for a hot day on the lazy island.
