Description
Our ciders are made with the wild apples and pears that grow on Salt Spring Island, and with apples from regional orchards. We never add any water. Our process involves slow-fermenting single varieties and allowing each to mature until it has fully developed. The ciders are then carefully blended for complexity and depth of flavour; our Dry and Semi-Dry ciders are each blends of over 10 different apple varieties! While the blending process is crucial (and arduous), the special character of our cider is due to the wealth of heritage cider apples that grow on Salt Spring, and to our commitment to making fully natural ciders. In general, you'll find that we tend to make our ciders quite dry, with delicate flavours (including our berry and plum ciders), and that's the way we like them!

Pale, with a slight bit of haze. It's soft for a cider, with good pear notes, maybe a bit of the grape skins. Good quality, though probably less grapey than I was expecting.

341mL can, pours a deep dark purple-ish amber with a small beige head. Aroma has plenty of blackberry upfront, not getting much citrus/yuzu though, and a touch of crisp apple skins. Flavour is much the same with low-to-medium sweetness, plenty of jammy blackberry, and maybe a touch of yuzu that I wish there was more of. Not much complexity and too sweet for me even at this level, but it’s alright.

Bottle pour at Farmhouse Fest 2025, pours a clear blonde with a small white head. Aroma has crisp pear skins, some subtle grape skins, and a touch of bugginess. Flavour is buggy, with lots of buggy notes, crisp apple skins, and musty grape skins. Cohesive, integrated and subtly complex. Great stuff.

Bottle pour at Farmhouse Fest 2025, pours a clear pale golden with a small white head. Aroma has some musty dry apple skins and some wild yeast. Flavour is dry, with lots of dry grape skins, apple skins, and farmhouse notes. Vinous and dry finish. Excellent.
