Description
Our ciders are made with the wild apples and pears that grow on Salt Spring Island, and with apples from regional orchards. We never add any water. Our process involves slow-fermenting single varieties and allowing each to mature until it has fully developed. The ciders are then carefully blended for complexity and depth of flavour; our Dry and Semi-Dry ciders are each blends of over 10 different apple varieties!  While the blending process is crucial (and arduous), the special character of our cider is due to the wealth of heritage cider apples that grow on Salt Spring, and to our commitment to making fully natural ciders. In general, you'll find that we tend to make our ciders quite dry, with delicate flavours (including our berry and plum ciders), and that's the way we like them!

Pale, bright and gold. Fruity, a bit estery on that fermentation. That ferm has this finishing a bit rough.

Pale pinkish colour, with a slight haze. The grapes are prominent. Complex wine/cider interplay.

Bottle pour at FHF 2024, pours a clear blonde with a small white head. Aroma has a floral character upfront, with apple skins, and gentle funk. Flavour is funky, with quite dry, with wild yeast, some mustiness, and a bit of earth. Wild and funky but a bit obscured.

Bottle pour at FHF 2024, pours a cloudy blonde with a small white head. Aroma is dominated by the brett upfront, with light oak, crisp apple skins. Flavour is funky and dry, with plenty of brett, oak, and apple skins. Not bone dry—there's just enough residual sweetness to make this very drinkable. Very good.

Bottle pour at FHF 2024, pours a hazy dull blonde with a small white head. Aroma has gentle apple skins, a toxin of vinous notes, and very gentle funk. Flavour is crisp and vibrant, with lots of apple skins, some musty grape skins, and wild yeast. Cohesive and complex. Excellent.
