Description
Our ciders are made with the wild apples and pears that grow on Salt Spring Island, and with apples from regional orchards. We never add any water. Our process involves slow-fermenting single varieties and allowing each to mature until it has fully developed. The ciders are then carefully blended for complexity and depth of flavour; our Dry and Semi-Dry ciders are each blends of over 10 different apple varieties!  While the blending process is crucial (and arduous), the special character of our cider is due to the wealth of heritage cider apples that grow on Salt Spring, and to our commitment to making fully natural ciders. In general, you'll find that we tend to make our ciders quite dry, with delicate flavours (including our berry and plum ciders), and that's the way we like them!

FHF 2024. Appearance: clody blonde with a white head. Aroma: dry, apples, apple skins, bold, some nice Brett. Taste: along the same lines, quite dry but still juicy. Overall: goos one.

FHF 2024. Appearance: almost clear pale golden. Aroma: nice dry and a little bit apples, apple skin and seeds. Taste: along the same lines, bone dry, no sweetness. Overall: I wish a bit of sweetness would stay here 🙂

This is cider infused with orange booze and rosemary booze. The rosemary pops on the nose. The cider actually leads on the palate. Rosemary is a nice accent in the finish. Orange is subtle. Not an approach that sounds like quality but the end result is enjoyable.

355 ml can. Pours a dark garnet color. Aromas of berries and fresh cut ripe apples. Flavors of muted berry jam and Yuzu with a little apple in the background

Hazy and pale. Sweet, mostly pineapple pulp and sugar. Maybe a touch of apple tartness.

Pale purple. Fruity, good berry, sweet, kind of runs roughshod over the apple.

Very pale pink, light rhubarb, appley. Good rhubarb character, well balanced for being medium sweet.

Cloudy, tart, nice complex fruit, mild spiciness. Off-dry finish. A bit of pear character, and I don't eat enough quince to really tell.
