Description
Our ciders are made with the wild apples and pears that grow on Salt Spring Island, and with apples from regional orchards. We never add any water. Our process involves slow-fermenting single varieties and allowing each to mature until it has fully developed. The ciders are then carefully blended for complexity and depth of flavour; our Dry and Semi-Dry ciders are each blends of over 10 different apple varieties! While the blending process is crucial (and arduous), the special character of our cider is due to the wealth of heritage cider apples that grow on Salt Spring, and to our commitment to making fully natural ciders. In general, you'll find that we tend to make our ciders quite dry, with delicate flavours (including our berry and plum ciders), and that's the way we like them!

Cloudy, tart, nice complex fruit, mild spiciness. Off-dry finish. A bit of pear character, and I don't eat enough quince to really tell.

Bottle sampled at BC Cider Fest 2024, pours a cloudy blonde, no head. Aroma is soft and muddled, with some hay, light acidity, and soft apple core. Flavour is aggressive, with lots of hay, apple core and gentle acidity. A bit too abrasive without the integration and complexity to boot. Meh.

Bottle sampled at BC Cider Fest 2024, pours a hazy blonde with a small white head. Aroma has plenty of guava juice and pineapple, with light acidity. Flavour is very juicy, with intense pineapple upfront, followed by aggressive guava, and light apple acidity. Juicy and well-integrated. Not complex but quite pleasant.

750mL bottle, pours a hazy blonde with a small white head. Aroma has some spicy peppers, apple skins, and a touch of pineapples. Flavour is juicy sweet, with tons of pineapple, spicy peppers, and apple skins. Very sweet to match the spice. Nothing interesting but it's decent.

750ml @ Black Christmas 2023 at Heritage Hall. Appearance: hazy pale golden. Aroma: spices, some sweetness and apples. Taste: along the same lines, spicy, red apples, moderately sweet. Overall: interesting.
