Description
Our ciders are made with the wild apples and pears that grow on Salt Spring Island, and with apples from regional orchards. We never add any water. Our process involves slow-fermenting single varieties and allowing each to mature until it has fully developed. The ciders are then carefully blended for complexity and depth of flavour; our Dry and Semi-Dry ciders are each blends of over 10 different apple varieties!  While the blending process is crucial (and arduous), the special character of our cider is due to the wealth of heritage cider apples that grow on Salt Spring, and to our commitment to making fully natural ciders. In general, you'll find that we tend to make our ciders quite dry, with delicate flavours (including our berry and plum ciders), and that's the way we like them!

Smells of nice sweet apricot and hops, has a clear yellow body with no head. Flavour is a nice hop and apricot mix, good balance and it works well. Mouthfeel has nice crispness from the carbonation. Highly drinkable.

Smells of soft candle wax, has a bit of foam on top of a cloudy dark pink body. Flavour is floral perfume and some cidery sweetness. Crisp carbonation. Not bad, just okay.

Smells of nice orange zest and rosemary on the nose as advertised, though it also starts to meld into soya sauce after awhile. Has a simple clear orange body with no foam. Flavour is nice rosemary, balances well with the bitter orange and works well together. Crisp on the mouth. There's a good blend here, nice balanced.

Smells of dry tannins and plums though all a little soft. Has a nice pink body with very vague foam on top. Flavour is mellow plums, some inkiness and a plum skin aftertaste. Mouthfeel is crisp enough. This is nice but everything could be brighter.

Smells of soft apple with some sweetness. Has a mellow yellow body with no head. Flavour is a mixed and muddy boozy affair of apples. Mouthfeel is crisp enough. It's a bit messy and not really in the right ways.

Smells very faintly of pears, has a light white body with no head. Flavour is soft pears, mellow sugar is barely kept in check. Okay crispness on th mouth. Not too inspiring but drinkable.

Soft apple aroma, light gold body with no foam. Flavour is vague sugariness. Mouthfeel is crisp and full. Not much going on but unintrusive for a hot spring day.

Has a simple smell of sweet apples, a nice yellow body with no foam. Flavour is good dry apple though simplistic. Good crispness on the mouth. It's nice and drinkable though pretty straightforward.

Dark currants and anise. Clear red with a small white head. Much like the nose with a soft finish. Interesting with a touch of acidity.

750 ml swing top bottle. Pours a hazy light gold with light head and lots of carbonation. Aromas of lemony soap and dry apples. Flavors of plasticy dry fruit, citrus and more old apples. Not a fan.
