Draft: Poured a light reddish color ale with a small foamy head with light retention. Aroma consists of sour raspberry with light malt body and light rustic notes. Taste is quite refreshing with lots of fresh raspberry with a medium sourness level and some light rustic malt notes with balanced sweet undertones. Body is about average with good carbonation. Well made with great refreshing factor and some level of complexity.

Bottle: Poured a deep pitch-black color stout with a medium off-white creamy head with good retention and some lacing. Aroma consists of dry roasted malt with loads of black chocolate and light dry bitter finish. Taste is also a very concoction of black chocolate with some roasted malt and light lactose notes to offset some of the bitterness. Body is quite full with nice creamy texture and some good carbonation with no apparent alcohol. Very well brewed with nice level of complexity but also has a good drinkability factor.

Draft: Poured a dark deep brown color ale with a light off-white head with OK retention and minimal lacing. Aroma of bourbon and deep caramelized sugar is quite intense. Taste is dominated by loads of bourbon notes with some alcohol coming through with notes of caramelized malt and toffee. Body is quite full with well rounded creamy notes from the barrel-aging. Interesting and quite intense though maybe a bit too much bourbon coming out as well as some alcohol notes.

650mL bottle, split with Matts_Property, pours cloudy yellow with a small white head. Aroma o wheat, yeast, citrus and orange tang. Flavour is quite muted - citrus, orange peel, banana, clove and wheat. Nothing really stands out though it's decent.

A lightly hazed golden belgian ale with a thin white head. A light perfumey malt aroma with some light Brett funk, catnip, coriander, wild hops. In mouth, a hopped up Belgian with good herbaceous and wild hops, belgian yeast profile, coriander, a bit wild, very nice. On tap at brewpub, April 30, 2011.

A hazed yellow mweizen with a thin creamy white head. In aroma, smooth bananas, berries, light sulfury notes, very fruity and sweet. In mouth, a smooth mineral attack, followed by classic bananas, berries, a touch of cloves, a bit light but nice. On tap at brewpub, April 30, 2011.

A deep dark stout with a thin lacing dark brown head. A nice herbaceous chocolate aroma, with coffee grinds, light grassy notes. In mouth, a thinnish bitter chocolate with grassy coffee, light funkyness, some light off fusel, but not bad. On tap at brewpub, April 21, 2011.

A golden amber ale with an onctuous white head. In aroma, a pleasant grainy malt with spiced notes, light coriander, smooth. In mouth, a classic belgian ale with light incense, smooth lingering hops, very nice and herbal, medium bodied. On tap at brewpub, April 21, 2011.

Glass, draught, Winter Warmer 2010, savoured on January 7 2011; eye: black, opaque, tiny ring of cappuccino head; nose: roasted malt, woody, hops, alcohol, liquorice, dark chocolate; mouth: roasted malt, woody, hops, alcohol, liquorice, dark chocolate, ink, resinous hops, soy sauce, quite dry finale in roasted malt with presence of alcohol and resinous hops, full body, not much carbonation, more bitter than expected, more astringency than expected; overall: quite good FRANÇAIS Verre, en fût, Winter Warmer 2010, savourée le 7 janvier 2011; œil : noire, opaque, petit anneau de mousse cappuccino; nez : malt rôti, malt torréfié, boisé, houblon, alcool, réglisse, chocolat noir; bouche : malt rôti, malt torréfié, boisé, houblon, alcool, réglisse, chocolat noir, encre, houblon résineux, sauce soya, finale très sèche en malt rôti avec présence d’alcool et de houblon résineux, corsée, peu carbonatée, plus amère que prévue, plus astringente que prévue; en résumé : très bon
