Tasting at Matt’s
Pale blond color. Nice apple aroma, with hazelnuts. Dry mouthfeel, bit of lame apple flavor, nothing to take home about.

Light gold. This has a fairly strong apple taste. The actual palate is less impressive on apple, just a hit of alcohol, tartness, and ultimately I’m not sure this is quite right. The elements are all things you want in a cider, I’m just not sure that the whole thing comes together the right way.

500mL bottle, pours a clear blonde with a small white head. Aroma brings out gentle acidity, with medium sweetness, and a touch of caramel. Flavour is light-to-medium sweet, with a fairly dry apple quality and light alcohol. Dry and underpowered for a 8.5% cider. Underwhelming, but decent.

Corked bottle, tasting at Matt’s, vintage 2013
The aroma is mild, but it has some elements of Ice Cider. Sweet mouthfeel, possibly a bit oily; some apple flavor, not much depth though, and just warming alcohol, without being burning.
Quite nice.

375mL bottle, pours a clear bronze with no head. Nose is complex, with apple brandy dominating along with medium-high sweet apples. Flavour is very complex, with lovely apple brandy notes, medium apples and moderate sweetness. The alcohol is surprisingly hidden; there isn't really any burn at all. Complex and well-constructed. Excellent.

Bottle - Nice semi sweet Apple with some vanilla like sweetness. Pale clear gold. Very dry Apple with lots of oak and some tart Apple skin. Finish is a ton of oak with little of the bourbon characteristics coming through.
