It’s very possible that you are required to have a mosaic pale ale on draught if you are a brewery in Seattle. I went to four breweries and all of them had a mosaic pale. This one and Fremont’s were the best (technically Fremont’s was an IPA).
Peach-copper beer with good clarity and a thin white head that sits at cover.
Nectarines, spruce, apricot and strong marmalade-like notes in the nose yield somewhat to biscuity malt character. Fresh yeast and mineral water on the finish, without any noxious resin, nor flaw or alcohol.
Quite reserved in the flavor department, with nectarine, apricot and light peach being most prominent. Pale malts mix with the hop flavors adding light sweetness while chewy, biscuity notes emerge on the finish, keeping things dry. Marmalade, leafy, dank suggestions and just a touch of sweetened pine merge on the finish. Medium-light body, low to medium carbonation and low bitterness for the style.

Dark amber to light mahogany with some auburn tints. Dark beige head is medium-sized and shows modest retention. Good clarity.
All sorts of various nuts in the nose: hazel, peanut, walnut, that sort of thing with lightly toasted grains, even a bit of roast and some softer, balancing caramel notes. No alcohol or flaw.
Very toasted and roasted flavor shows plentiful coffee and hazelnut as vanilla-tinged pale malt sweetness balances gently towards the end. Sticky/chewy body with ample carbonation and no flaws.

Gently hazy pale golden liquid is topped by a small white head with modest retention.
Floral hops, fresh coriander and a healthy dose of malts (cookie, biscuit, wheat bread) give this the impression of a bit more of a malt-focused wit. It’s not a heavily fruity, overly estery rendition, which is nice. No alcohol or flaw.
Light tangerine flavors abound with a great interplay of malts, creating orange blossom and delicate honey flavors, as well as some stronger whole wheat baguette-like notes. Crisp, bright finish dries out with citrus and peppery hop and coriander notes lingering. Well attenuated with an ample, light body and appropriate carbonation.
No manure noted.

Dark maple with some brighter cherry-auburn tints. Good clarity with a beige head that shows modest retention.
Graham cracker, cherry, strawberry and light sourdough in the nose are all coated by a light layer of toffee/buttercream. Peppery hop notes break up the malt dominance with an earthy, somewhat hay-like finish. No alcohol or flaw.
Sweet up front, with a toffee and caramel character that in turn gains a bit of toasted flavor, drying things out as spicy hops add moderate bitterness. Texturally there are some pleasant bready-grainy notes to break up the crystal malt hardness and it’s amply carbonated with good overall attenuation and cleanness. Well-made beer, as seems to be the norm at Populuxe, but I really don’t care for these slightly stronger, medium malt-focused beers (which is what Autumn ales generally seem to be).

Clear, light golden beer with good carbonation and a small but moderately-well retained white head.
Hay, herbs and fresh, lightly fruity yeast notes in the nose are all quite welcome. I don’t get any graininess or dough, but rather just clean, well-attenuated pale malt-derived honey and light cracker. No alcohol or flaws.
Light, but as with the Belgian Pale, their beers all have appropriate body and seem to be nicely unfiltered and conditioned for a proper amount of time. Very clean, with light fruitiness, delicate honey and light bitterenss. Fresh minerality, lively, bright hops and crisp hay notes on the end. Very good.

Clear blonde liquid is lightly carbonated creating a small, white head with moderate to moderately-low retention.
Subdued fruitiness in the nose is joined by biscuity malts with an overall dry feel to it. Low/negligble phenolics and no alcohol or flaws. Hoppiness is light as well, adding leafy, floral notes.
Well-attenuated but with still a good malt backbone to it. Lightly chewy, you might say, with moderate sweetness and notes of tangerine, nectarine, apple from the yeast. Hay, biscuits and herbs are given off by the malt and hops in a clean yet sofly estery finish with light honey lingering. Gentle, yet ample, carbonation.
