About
In the Spring of 1992, my father, Pierre Celis, flew from Belgium to the United States to start a new brewery in the great state of Texas. No one suspected that he carried something very precious, concealed in his tube socks. It was the original yeast strain Pierre had been using to brew his world-famous Belgian-style Wit beer for the past 30 years. And there was no way he was going to brew without it.

The first Celis Brewery opened on July 11th in 1992. It was an immediate success. Turns out Texans really liked our beer! Before we “crazy Belgians” arrived, most Texans were drinking one of “the big three” brands on the market. The small craft breweries that we all know and love today simply did not exist. When Pierre Celis started brewing his beloved beer, he created a craft beer that changed everything.

Exactly 25 years to the day it first opened, the legendary beer is back, better than ever at Celis Brewery 2.0. Along the way in the Spring of 2011, we lost my Dad. But Pierre’s spirit and his commitment to quality lives on—along with his original yeast strain.

Welcome to the future, the legacy, the celebration, and the beer that started it all. Welcome to Celis Brewery.

Admin Note: After the original brewery in Austin closed the Celis brand was purchased by Michigan Brewing Company and brewed in Michigan for a decade. Then contract brewed at Two Roads.

Bottle. Sweet apricot and clove aroma. Light orange yellow color with small head. Light sour apricot and wheat flavor. Very nice body. I had the Texas Celis white about 15 years ago but don’t remember enough to rate it but this is still a well-made beer - has nice witbier characterics with a unique flavor I’ve never really gotten from other wits. One of the best American witbiers. --- Beer merged from original tick of White on 10 Aug 2019 at 22:00 - Score: 10. Original review text:

Sampled from a 12 oz brown bottle this beer poured a light golden color with a small white head. The aroma was lemon, wheat and coriander with a strong musty undertone. The flavor was citrus, pepper, coriander, and a tangy malt base. Again there is a musty element that is noticeable. The finish is peppery. There is a strong alcohol burn that dominates this beer.

I had been rather curious about this one. Sampled from a 12 oz brown bottle this beer poured a salmon color with a small white head. The aroma is dry and musty with a faint hint of some vague fruits. The flavor is dry and wheaty with some vague dry fruits. The fruit flavor is totally unidentifiable as raspberry. Rather unimpressive.

I have been looking forward to trying this one. Sampled from a 12 oz brown bottle this beer poured a cloudy bright golden color with a small white head. The aroma is strong with wheat, coriander and orange. The flavor is dry and wheaty with a spicy pepper note and fairly strong citrus. The finish is yeasty and musty. A nice example of the style.

2005 bottle consumed 5/28/2005. Pours a clear pink, with touches of light copper and a moderate amount of rapidly receding, bubbly, pink-tinged white head. Little to no lacing. Aroma of raspberries, fresh and soft, but not really juicy or overly aromatic. Hints of vanilla and light yeast, not definitively Belgian in nature, and in fact, I don’t get much in the way of anything other than light raspberries. Maybe some soda water. . .Flavor begins with lightly tart raspberry, backed by a hugely watery mouthfeel and light, dry papery notes. Touches of mildly sweet sugars, hint of vanilla and raspberry seeds. Dry on the fnish, with way too much wateriness. Bubbly, artificial carbonation is overdone. At least its not too sweet, I guess.

Sample at the Mondiale 2005: Poured a light reddish color ale with a bubbly head with minimal retention. Aroma is totally dominated by fake raspberry cough syrup. The chemical smell is overpowering and gross. Taste is also exclusively dominated by this horrible smell. This is a shame that Celis name is attached to such a foul drink.
