Description
In the Spring of 1992, my father, Pierre Celis, flew from Belgium to the United States to start a new brewery in the great state of Texas. No one suspected that he carried something very precious, concealed in his tube socks. It was the original yeast strain Pierre had been using to brew his world-famous Belgian-style Wit beer for the past 30 years. And there was no way he was going to brew without it.
The first Celis Brewery opened on July 11th in 1992. It was an immediate success. Turns out Texans really liked our beer! Before we “crazy Belgians” arrived, most Texans were drinking one of “the big three” brands on the market. The small craft breweries that we all know and love today simply did not exist. When Pierre Celis started brewing his beloved beer, he created a craft beer that changed everything.
Exactly 25 years to the day it first opened, the legendary beer is back, better than ever at Celis Brewery 2.0. Along the way in the Spring of 2011, we lost my Dad. But Pierre’s spirit and his commitment to quality lives on—along with his original yeast strain.
Welcome to the future, the legacy, the celebration, and the beer that started it all. Welcome to Celis Brewery.
Admin Note: After the original brewery in Austin closed the Celis brand was purchased by Michigan Brewing Company and brewed in Michigan for a decade. Then contract brewed at Two Roads.

12 oz bottle. Pours gold with a small white head. Slightly sweet aroma with bubble gum and coriander. Flavor is bubble gum up front, coriander, and orange peel with wheat, particularly in the finish. Very low carbonation. Okay, but definitely nothing exciting.

bottle - Pours hazy light amber with a one finger off-white head. The aroma is mild malt and spice. It tastes of sweet malt and spice with a touch of cherries. Decent brew.

Location: 12 oz bottle, 10/22/09
Aroma: Toasted grains, caramel, orange
Appearance: Hazy golden-orange color
Flavor: Malty with a medium sweetness
Palate: Light-medium body, somewhat creamy
Overall Impression: This beer was alright. It's not very exciting, but it is drinkable. It is a little bit on the boring side. You can drink it, it may quench your thirst, but it is not going to excite anyone.

Bottle. Pour is the color of maple syrup and supports just a little bit of a fizzy beige head. Aromas are of bread and apples with a little bit of a nut and earth side to them. Flavor is a little like gunky apple juice or something... a bit of bread in the finish, but this one needs a little something different to get me excited. As is, it’s not a drainpour, but it’s not something I will revisit.

Bottle thanks to ilovedarkbeer. Pours with a quick to fade, white ring and a clear golden body. Aroma is alcohol, corn, light esters, CO2 spritziness, and phenolic plastic. Taste is sweet with candied sugar, dry fruits (pear) and phenolic plastic. Alcohol is very evident. Fizzy and dry mouthfeel.

bottle - Pours hazy light yellow with a one finger white head. It has a citrus yeast aroma with some wheat malt apparent. It’s a sweet witbier with the malt dominating this light, refreshing brew. Citrus notes accent it nicely. It’s a little thin, but pretty good overall.
