Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Panda from Danlo, thanks Ed. Pours near clear gold and flat. Mild sherry aroma, stewed pear, brown sugar, booze. Taste: light to moderate sweet, semi-dry, mildly funky, some barrel notes. Doesn't taste it's ABV. Medium body with low/no carbonation.

Appearance - murky orange to brown. Gently carbonated. Slight head.
Nose - tangy apple and bruised apple. Hay and wood.
Taste - bruised apple and red apple skin.
Palate - medium bodied, tangy bittersweet middle and finish.
Overall - good!

Panda at home thanks to Ed Danlo. A light hazed greenish straw coloured pour with a small white halo that fades . Aroma is semi sweet, vanilla, pear, sweaty pear, bark, light funk. Flavour is composed of crisp, white pear, light tart, floral notes, bark, light tannin. Palate is crisp, light grainy tannin, moderate fine carbonation. Delicate notes.

(Cask at Craft Beer Co Covent Garden, London, 22 Nov 2024) Golden colour, slightly hazy, with no head. Fruity nose with notes of apples, honey and apple blossom. Fruity taste with apples, flowers, citrus and honey. Generous acidity. Medium body, with a certain sweetness. Tasty and well balanced. Nice one.

Bottle from Ciderwinkel. Aroma is funky with horseblanket, tart and sweet apple, barnyard, touch of sulphur and smoke. Flavour is moderate tart and sweet, body is medium. Captivating complex wild aroma.

22/1/2025. Bottle shared by danlo, cheers Ed! Pours clear golden with a copper tint and a few bubbles. Aroma is rich, pear, woody, vanilla, sugar syrup, fruit biscuit, sultanas. Medium sweetness with some good developing bitterness. Quite full bodied. Carbonation starts spritzy but eases. Drying finish. Super stuff.

750ml bottle from Fine Cider Co, for #rgpm. Hazed yellow gold colour, thin white head that dissipates to a foam rim and aroma of perry pear, funk. Taste is sweetish, perry pear, floral, leathery funk, with some citric acidity. Medium bodied, soft carbonation, medium peary finish. Nicely drinkable.
