Description
Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

On tap at Taphouse CPH, pours a clear pale golden with a small white head. Aroma is dry and musty, with pear skins, fermented out honey, and a hint of sugars. Flavour is dry, with lots of musty dry pear skins, hay, and gentle acidity. Musty, dry, and tannic. Good stuff.

On tap at Taphouse CPH. Pours clear blonde with a white head. Sweet pears, gentle skins on the nose. Flavour has slightly tart skins, juicy pears. Clean, nicely done.

750ml bottle from Cat in the Glass. Opened with a pop. Slightly hazed yellowy golden colour, thin white foam rim and aroma of apple, funk, wood. Taste is sweetish, appley, with earthy funk, some tartness and bittersweet tannin. Medium bodied, light carbonation, drying funky tart & tannic finish. Nicely drinkable.
