Description
Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Plastic cask at GBBF 08. Haze gold, green hints. Ooh, now that’s like pear jam. Stewed pear fruit. Funny, I’ve not had a dry perry all day. Medium I would call this. Fine and good stewed pears.

Polycask, at Merton Summer Beer Festival July 19th 2008 Pours warm clear gold, nice funky tingly aroma of crisp appleskins. Taste is good there is plenty of apple there, but as single varietals go not one of the best, bit drying on the finish, good and tangy sharp at times.

Cask at aberdeen Beer festival ... light orange ... dry tart appple ... very apple butnot quite ... drying in linger which is noce and loads od apple inlinger ...

[i] [b] Polypin at Meton Winter Beer Festival Feb’ 08 and also at National Winter Beer Festival Manchester Jan 08[/i] [/b] This was noticeably more yellowy at Merton than when we (Loz and I) had this last time at Manchester, wonderful oak flavours, the whisky and pear combine very well and the attributes that this kind of aging does is in no way detrimental I really liked this. We had managed to get the last four and a half gallons of this for Merton having been impressed with it so much at Manchester and I thank Tom Oliver for letting us have this when I know he wanted to put it through his shop (top bloke) This is a really interesting Perry with plenty in there, juiciness and tang is there but softened considerably by this aging. I reckon we tried it when at it’s peak in Manchester and would give it [i] [b] 3.8 [/i] [/b] for Merton I would give it [i] [b] 3.6 [/i] [/b] so let’s split the difference and give it [i] [b] 3.7 [/i] [/b]

Hazy yellow. Simple apple juice aroma. Sweet and boring apple juice like flavour.

From barrel at GBBF 2007. It’s a decent appley cider. Reasonable dryness. Bit of rubber, ok carbonation actually. Spritzey in mouth. Bit of rum/whisky even. Drinkable. Chewy straw in mouth.

[i]Polypin at Merton Summer Beer Festival 6th July 2007 [/i] Ligtish in colour, pouring betwenna silver and a gold colour. Nice peary aroma, little bit of sweetness on the nose, sweetish in the taste but also nice fresh crisp bite, plenty of ripe pears in there.

[i] Bottle, picked up at Olivers, Ocle Pychard, Herefordshire[/i] Poured from a small 37.5cl corked bottle with a golden orange colour and pretty good clarity. This had a very smooth and sweet flavour the peary taste was there but in a much more mellow way than in some of the other single varietals.

Had this at the National Cheese Festival, Montpellier, Cheltenham, 30-09-06 from the CAMRA Cider and Perry stand. Very pale lemon coloured Perry, pears on the aroma and nice fruity pear taste, coming across as sweeter than the Orchards Blakeney Red that I’d had later and whilst very nice also less flavoursome.
