Description
Real cider and perry from the county of Herefordshire in England.
Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".
Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.
Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

ABV: 5.4%. Clear light to medium yellow colour with virtually no head. Aroma is moderate to light heavy pear, sweet pear, celery notes. Flavour is moderate to light light heavy sweet with a average to long duration, sweet pear, pear, celery notes. Body is medium, texture is oily, carbonation is soft to flat. [20111022]

Bottle at Fin & Loz’s tasting with Jan, Charlotte, Craig, Stella & kids consumed Saturday 22.10.11 I picked this at Tom Olivers, Ocle Pychard, Herefordshire 2011 Pours hazy yellow/gold with some white bubbles. Bit sweet and if truth be told not as good as I was hoping. Soft in the mouth with some juiciness from the pears. Ok A6 A4 T6 P3 Ov12 3.2

Bottle at Fin & Loz’s tasting with Jan, Charlotte, Craig, Stella & kids consumed 21.10.11 I picked this up from Olivers, Ocle Pychard, Herefordshire summer 2011 This seems to have softened just a little too much by the rum cask ageing. Its almost copper in colour with a gentle carbonation and good clarity. The apples are juicy and it is fruity with a nice gentle tang but its lost some of its edge by being aged this way in my opinion. Another decent cider from Tom Oliver but not one of his best this time. A6 A4 T7 P3 Ov13 3.3

Bottle 750ml.ABV: 5.0%. Clear medium orange yellow colour with a small, fizzy, fair lacing, fully diminishing, off-white head. Aroma is moderate to light heavy apple, horse blanket and vanilla notes. Flavour is moderate to heavy sweet and light acidic with a long duration, wood, apples, apple skin. Body is medium, texture is oily, carbonation is flat to soft. [20110930]

Flavour is moderate to light heavy sweet with a long duration, dry, tart apple - pear, fresh pear flavor and aroma. Body is medium, texture is watery, carbonation is flat. [20110713]
