Description
Real cider and perry from the county of Herefordshire in England.

Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".

Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.

Nominally referred to as "minimal intervention", we strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Bottle 500ml. @ home.Clear light yellow colour with a small, fizzy, virtually none lacing, fully diminishing, white head. Aroma is moderate pear, wood, light barnyard, dry apple - pear, fresh pear. Flavour is moderate to light heavy sweet with a long duration, dry, tart apple - pear, fresh pear flavor and aroma. Body is medium, texture is watery, carbonation is flat. [20110713]

Cask at GBBF 2010. An unclear yellow perry with a thin white head. The aroma has notes of beech wood smoke and pears. The flavor is dominated by pears, and the mouthfeel is EXTREMELY dry.

Cask at Southampton Arms, London. A light yellow perry. The aroma is dominated by pears. The flavor is acidic with notes of pears, leading to a tart finish.

Bottle 500ml. @ home.Clear medium yellow colour with a fizzy, virtually none lacing, fully diminishing, white head. Aroma is moderate to light heavy apple, apple peel, sweet apple, overriped apples. Flavour is moderate sweet and light acidic with a average duration, dry, sweet apple, sour apple, overriped apples, wood notes. Body is light to medium, texture is watery, carbonation is flat. 750ml bottle from the Bristol Cider Shop. Deep gold in colour with a slight haze and a few bubbles. Rich aroma of dryish apple fruit with some slightly honeyed sweetness. Very easy drinking, with plenty of juice, and a touch more sweetness before a more tart finish. A good medium dry cider.

Bottle @ J&C, Friday session, 2011. Thanks. Pours clear pale yellow with a small off white bubbly head. Oak, pear, barnyard and vanilla. Low carbonation. Dry and fruity apple and pear. Mellow. A bit thin . .

Bottle 750ml picked up at the Hop Pocket, Bishops Frome, Herefordshire, March 13th 2011 consumed 27th March 2011 Pours pale green tinged, straw yellow. wonderful overipe juicy pears. I love Blakeney Red and I must say I do enjoy it just a little on the sweet side, this is wonderful, just a touch of tartness at end. Great perry, much like the cider I had yesterday I could just keep drinking this, but tomorrow could be. A6 A4 T9 P4 Ov16 3.9

Flavor is moderate to light light heavy sweet and light acidic with a average to long duration, wood - oak, dry. Body is medium, texture is watery to oily, carbonation is flat. [20110312]
